Today’s recipe a quick and easy way to make a homemade broccoli cheddar and chicken soup without all of the time and effort that a from-scratch version entails.
As much as my family loves my homemade Broccoli Cheddar Soup recipe, it does require a lot of ingredient prep (with 14 ingredients) and takes nearly 40 minutes to make.
This broccoli cheddar chicken soup by comparison uses just 7 ingredients (plus salt and pepper) and takes less than 5 minutes to prep and 12 minutes of hands-off cooking time in the Instant Pot.
Using pre-made, canned cheese soup skips the need for shredding cheese or using any additional cream to make this soup perfectly creamy and cheesy.
Broccoli Cheddar Chicken Soup can be stored in airtight containers in the fridge for up to 5 days.
How to freeze broccoli cheddar chicken soup: This soup recipe freezes beautifully because it doesn’t contain any cream. Store in ziptop freezer bags or your favorite freezer containers for up to 3 months. (This set of freezer containers is a crazy bargain.) Thaw completely in the fridge before heating up.

- Broccoli, florets chopped
- Onion, minced or pureed
- Chicken Drumsticks or Thighs, fresh or frozen *remove 5 minutes from cook time if fresh
- Cheese Soup

- Salt and Pepper, to taste
- Shredded Cheese, optional garnish
Tip: add garlic powder, paprika and mustard powder for an additional depth of flavor.

How to Make Broccoli Cheddar Soup in the Instant Pot
Place all ingredients in Instant Pot and give it all a good stir.
Place the lid on the IP and select the “Soup/Chili” setting for 12 minutes.
Seal and cook, then natural release.
Check the chicken with a meat thermometer for an internal temperature of 165F.
Taste and adjust seasoning.
Serve with an optional garnish of additional cheese.
