Hasselback Potato Bake Recipe

Growing up in an Irish-Italian household, the only ways I ever ate potatoes was mashed or fried. Hasselback Potatoes were an absolute revelation with that perfect amount of golden, crispy “fried” potato texture combined with the tenderness of a baked potato. 

However, there’s a reason you normally only see hasselback potatoes around the holidays – they are a lot of work! They require precise cuts that just aren’t feasible for most busy weeknights (even with my handy chopstick hack).

This hasselback potato casserole removes the fancy knife work. You can use a mandolin like I did, or a food processor fitted with a slicing attachment, to prepare this family-sized casserole in less than 5 minutes.

Simply slice, arrange in your baking dish, drizzle with olive oil and melted better, then sprinkle with bacon and seasonings. Pop it in the oven and in bake for 50 minutes for perfect crispy-tender potato slices.

Honestly, I’ll probably be making our potatoes this way for Thanksgiving – it’s going to save me a ton of time in the kitchen and there is absolutely no compromise in flavor and texture. (Plus, that way everyone can take exactly the portion size that they want – because not everyone wants a full potato with their Thanksgiving supper.)

While I opted for salt, pepper and thyme, you can swap out my seasonings for homemade ranch seasoning, Italian seasoning, rosemary, etc. Our homemade poultry seasoning would be delicious on it, too.

If you need to prepare this recipe ahead of time, you can slice the potatoes 1-2 hours in advance without any noticeable change, or pop the sliced potatoes in cold water for up to 24 hours. Drain off the water and dab the potatoes with paper towel before proceeding with the recipe. You can even freeze the sliced potatoes for up to three months in an airtight freezer bag or your favorite freezer container. (This set of freezer containers is a crazy bargain.)

And yes – you can top these potatoes with melted cheese! Sprinkle on a handful of shredded cheese during the last 10 minutes of baking to ensure that the potatoes still get that golden, crispy texture and allow the cheese enough time to melt.

  • Russet Potatoes, sliced
  • Onion, sliced
  • Butter, melted

How to Make a Hasselback Potato Casserole

Preheat oven to 375F

Use a mandolin or sharp knife to make thin, equal slices of your potatoes and onions – about 1/8″ thick is ideal.

Grease a pie plate or casserole dish.

Arrange the sliced potatoes in your baking dish. Use a spiral pattern for a circular dish, or rows in a square or rectangular dish.

Insert the sliced onions an equal distance apart amongst the sliced potatoes.

Place the butter in a microwave-safe dish and microwave for 25 seconds until completely melted. Stir in the olive oil and then pour the mixture over the casserole.

Sprinkle on your seasoning and bacon.

Cover with tinfoil and bake for 35 minutes.

Remove the tinfoil and continue baking for 15 minutes to crisp up the potatoes and bacon.

Crispy Hasselback Potato Bake

Ingredients

  • 6 russet potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 2 Tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 teaspoons rosemary
  • 1 teaspoon thyme
  • 3 strips bacon, chopped

Instructions

  1. Preheat oven to 375F
