Instant Pot Tomato Soup Recipe
Being Italian, I always have waaaaay too many tomatoes in my kitchen.
We usually make Sunday gravy every week, but sometimes I want something a little bit different or lighter.
Growing up, I only ever tasted tomato soup from a can and this recipe ruins all of that. Real tomato flavor, actually filling, and you can rest assured that you’re actually getting all of the health benefits of tomatoes (and garlic and onions) that you just aren’t going to get from a canned soup that has been processed beyond belief.
Plus, this homemade tomato soup is kid-friendly, too! I just have to make sure that I do a good job pureeing the soup before I serve it to my daughter because she doesn’t want soup with “texture.” You can also add a bit of creamy if you want the soup to be even creamier (and a little less thick), but you definitely don’t need it.
You can also spice up this recipe by adding hot peppers, red chili pepper flakes, tumeric, cumin, or a seasoning blend like our homemade adobo seasoning or homemade taco seasoning. It’s super versatile.
How to pick the best tomatoes for tomato soup: you want ripe, fresh tomatoes characterized by sweetness and flavor. Sungold, cherry tomatoes, roma/plum tomatoes are all excellent options for making tomato soup. Roma or plum tomatoes are generally my preference because they have less water, so you get a bigger boost of flavor. Heartier tomatoes like beefsteak can be used, but I like to save them for using in sandwiches or salads.
Can I use canned tomatoes in this recipe? Absolutely. If the tomato selection at your grocery store or farmer’s market just isn’t up to par (or they are super expensive) you can substitute an equal amount of drained, canned tomatoes. Try to go with the low-sodium variety to avoid excess sodium.
Can this soup be frozen? Yes, after letting the soup cool, you can store in air-tight, freezer-safe containers and freeze for 3-6 months.
Can this instant pot soup recipe be made in a crockpot? Absolutely! The cook time is all that will change to be 3 hours on high or 5-6 hours on low.

How to Make Tomato Soup in an Instant Pot
Place the oil in the Instant Pot on the Saute setting.
Add the onion once the oil is hot and saute two minutes, then add the garlic for one minute.
Turn off the saute setting and add in all other ingredients.
Secure the lid and select the stew/soup setting for 10 minutes.
Natural release.
Use a blender or immersion blender to puree the soup until smooth.
Makes 8 cups of soup.

Thanks for catching that! That’s supposed to be included as an optional step, for someone who wants a heartier recipe – I made the recipe both ways and should have included the step-by-step for each, but overlooked it when writing up.
You don’t have to use potatoes, but if desired, you can add 1-2 potatoes.
