Today’s Toasted S’mores Fudge recipe has all of the cozy campfire flavors of a classic s’mores, in a cute layered fudge that is perfect for a family movie night or Christmas cookie tins. Gooey, chocolatey and caramelized to perfection, without ever having to start a bonfire.

A decadent twist on the campfire favorite, this s’mores fudge recipe is perfect for gifting, parties, or cozy nights in. A gooey, marshmallow-based fudge layered over graham cracker crust and finished with golden toasted marshmallows.  It's incredibly decadent while also being reminiscent enough of a classic s'mores to feel nostalgic and cozy.

S’mores Fudge Recipe

A fun reimagining of this classic campfire treat in a rich and giftable confection, today’s Toasted S’mores Fudge recipe is a layered fudge with all of the yummy flavors of a traditional s’mores.

Starting at the bottom, we have a buttery-sweet, crisp graham cracker crust, followed by a truffle-like fudge center that is soft, rich and creamy, topped off with a blanket of toasted marshmallows, broiled just long enough to brulee and brown, creating a caramelized crackle on top.

It’s incredibly decadent while also being reminiscent enough of a classic s’mores to feel nostalgic and cozy.

While we have several different methods of preparing fudge on the website, I like marshmallow-based fudges like this one as they tend to be lighter and creamier than versions prepared with condensed milk. You can swap this stove-top recipe out for a microwave fudge, if desired.

Fun fact: S’mores only trace back to the beginning of the 20th century with a recipe for “Some Mores” appeared in a 1927 Girl Scouts guidebook.

S’mores Fudge Recipe Variations:

  • Nutella Fudge: Replace ¼ cup of the chocolate chips with Nutella for a hazelnut twist.
  • Espresso Fudge: Stir in 1 teaspoon espresso powder to the fudge base for a deeper, more balanced chocolate flavor.
  • Peanut Butter Swirl: Drop spoonfuls of warmed peanut butter into the fudge layer before chilling, then swirl lightly with a knife OR replace 1/2 cup of the chocolate chips with peanut butter chips.
  • Sea Salt Crunch: Sprinkle flaky sea salt over the toasted marshmallow topping for contrast.
  • Cookie Crust: Substitute crushed chocolate wafer cookies for the graham crackers for a darker, cocoa-rich base.
  • Salted Caramel Drizzle: Add a drizzle of salted caramel over the fudge layer before topping with marshmallows.
  • Dark Chocolate Cherry: Fold in ¼ cup chopped dried cherries before pouring the fudge layer.
  • Cookie Butter Crust: Use crushed speculoos cookies instead of graham crackers for a spiced, caramelized base.

S’mores Fudge FAQs

Can I use marshmallows instead of marshmallow creme? Yes, you can use mini marshmallows in place of the marshmallow creme called for in the fudge, however I like that the creme creates an extra smooth, velvety fudge texture and find that it melts more evenly than marshmallows.

How to store s’mores fudge: Keep in an airtight container in the fridge for up to 5 days.

Can I freeze s’mores fudge? Personally, I don’t recommend freezing the fudge with the marshmallow topping as it won’t thaw nicely, so if you need to freeze this recipe, freeze for up to two months without the marshmallow topping. Allow to thaw overnight in the fridge then add the marshmallow topping and proceed with broiling.

Can I use milk chocolate instead of semisweet? You can, but the result will be very sweet, due to the addition of the sugary marshmallows and white sugar. (You can reduce the white sugar by a couple of tablespoons to offset this.)

Ingredients for S’mores Fudge

Graham Crust Ingredients:

  • Graham Cracker Crumbs
  • Unsalted Butter, melted
  • Brown Sugar
  • Sea Salt

Chocolate Fudge Layer Ingredients:

  • Semisweet Chocolate Chips
  • Marshmallow Creme, or can use mini marshmallows
  • Unsalted Butter
  • White Granulated Sugar
  • Evaporated Milk, or Heavy Cream
  • Vanilla Extract
  • Salt

Marshmallow Topping Ingredients:

  • Mini marshmallows

Tip: to set the graham cracker crust, you can bake at 350F for 8 minutes.

How to Make S’mores Fudge

Line a loaf pan with parchment paper and set aside.

Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, brown sugar and salt. Stir until evenly moistened, then press firmly into the bottom of the prepared loaf pan.

Make the fudge layer: In a medium saucepan over medium heat, combine sugar, evaporated milk, butter and salt. Bring to a gentle simmer, stirring until the sugar dissolves. Reduce heat to low and add chocolate chips and marshmallow creme. Stir constantly until smooth, glossy, and fully melted. Remove from heat and stir in vanilla.

Assemble the fudge: Pour the warm fudge mixture over the graham cracker crust, spreading it evenly with a spatula. Allow to cool at room temperature for about 10 minutes.

Add the marshmallow topping: Scatter mini marshmallows evenly across the top, pressing lightly to adhere (or melt and pour marshmallow creme overtop).

Broil: Set oven to broil and place the loaf pan on the middle rack of the oven for 1-2 minutes, watching closely, until the marshmallows are toasted and golden brown. Rotate the pan as needed for even color.

Set and serve: Let fudge cool to room temperature, then refrigerate for 1-2 hours until firm. Slice into bars or wedges. Serve slightly chilled for clean edges or at room temperature for a softer texture.

Ingredients

For the Graham Crust Ingredients:

  • 1 ½ cups graham cracker crumbs (about 10 full sheets)
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • Pinch of fine sea salt

For the Chocolate Fudge Layer:

  • 10oz semisweet chocolate chips
  • 7oz Marshmallow Creme, or can use 2 cups mini marshmallows
  • 4 tablespoons unsalted butter
  • ½ cup granulated sugar
  • ¼ cup evaporated milk, or heavy cream
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

For the Marshmallow Topping:

  • 3 cups mini marshmallows (or enough to cover the top evenly)

Instructions
