S’mores Cookie Cups Recipe

We’re in that space in between seasons, where the days are still warm and summery while the nights have a bitter hint of winter chill, when you still want to hold on to the last vestiges of summer while not wanting to stay outside for BBQ dinners or evening bonfires.

While some others are eager to dig into all things pumpkin and spice, I am still a couple months away from all of that. I want to enjoy all of the flavors of summer for just a little bit longer.

S’more Cookie Cup Variations:

  • Use pre-made sugar cookie dough or chocolate chip cookie dough for the cookie cups
  • Use peanut butter cookie dough for the cookie cups
  • Add a sprinkle of crushed graham cracker crumbs to the s’mores filling
  • Use a different type of chocolate – like peanut butter cups or any other favorite chocolate bar (or even chocolate chips) in place of the Hershey’s squares

How to make with a full-sized muffin pan: We made this recipe with a mini muffin pan, which was the perfect size for cookie cups (and is also the perfect size for making lunch box-sized muffins and egg cups.) However, if making with a standard-sized muffin pan, you’ll want to bake the cookie cups halfway before adding the marshmallow and chocolate filling to prevent over-baking.

How to Store S’mores Cookie Cups: Store in an airtight container at room temperature for up to 5 days. (You might want to heat them up for 10 seconds before enjoying so they are nice and melty.)
