S’mores Cookie Cups
All of the flavors of s’mores without having to light a bonfire. Today’s S’mores Cookie Cups feature melty, gooey and perfectly golden roasted marshmallows and luscious melted chocolate cradled in a simple sugar cookie cup.
S’mores Cookie Cups Recipe
We’re in that space in between seasons, where the days are still warm and summery while the nights have a bitter hint of winter chill, when you still want to hold on to the last vestiges of summer while not wanting to stay outside for BBQ dinners or evening bonfires.
While some others are eager to dig into all things pumpkin and spice, I am still a couple months away from all of that. I want to enjoy all of the flavors of summer for just a little bit longer.
Melt-in-your-mouth S’mores Cookie Cups are perfect making year round for a taste in summer in every bite.
S’mores Cookie Cups are perfect for serving at a BBQ or bringing along as a potluck treat. I think these would be a wonderful contribution if bringing to a friend’s BBQ, as it allows everyone to enjoy the flavor of s’mores without the mess.
S’more Cookie Cup Variations:
- Use pre-made sugar cookie dough or chocolate chip cookie dough for the cookie cups
- Use peanut butter cookie dough for the cookie cups
- Add a sprinkle of crushed graham cracker crumbs to the s’mores filling
- Use a different type of chocolate – like peanut butter cups or any other favorite chocolate bar (or even chocolate chips) in place of the Hershey’s squares

How to make with a full-sized muffin pan: We made this recipe with a mini muffin pan, which was the perfect size for cookie cups (and is also the perfect size for making lunch box-sized muffins and egg cups.) However, if making with a standard-sized muffin pan, you’ll want to bake the cookie cups halfway before adding the marshmallow and chocolate filling to prevent over-baking.
How to Store S’mores Cookie Cups: Store in an airtight container at room temperature for up to 5 days. (You might want to heat them up for 10 seconds before enjoying so they are nice and melty.)

Smores Cookie Cups Ingredients
- All-Purpose Flour
- Baking Powder
- Unsalted Butter, softened
- White Sugar
- Egg
- Vanilla Extract
- Large Marshmallows
- Chocolate

- Electric Mixer <– this is a great hand mixer if you don’t want to make the investment into a stand mixer
- Measuring cups and spoons
- Medium-sized mixing bowl
- Mini Muffin Pan <– you will want two so you can bake one tray while the other is cooling
- Parchment paper or Silicone Baking Mats
- Cookie scoop
How to Make Smores Cookie Cups
Cream the butter and sugar together with a mixer until light and fluffy, about 2 minutes.
Add in the eggs and vanilla.
In a separate bowl, stir together the flour and baking powder and then slowly add it to the sugar-butter mixture.
Once all of the flour is incorporated into the dough, form into a ball and cover with plastic wrap.
Refrigerate for 30 minutes before shaping into cookie cups.
Preheat oven to 350F.
Grease a muffin pan or mini tart tin and press 1-2 Tablespoons of cookie dough into each indentation and press to shape into a cup (along the bottom and sides of the indentation).
Bake the cookie cups for 5 minutes, then remove and place a marshmallow and square of chocolate into each one.
Bake for an additional 3-7 minutes until the marshmallows are toasted and chocolate is melted.
Allow the cookie cups to cool completely before removing and serving.
