S’mores Brownies
A loaded S’mores Brownie recipe with honey-sweet graham crackers and gooey melted marshmallows baked right into the batter. These brownies are a decadent s’mores-inspired treat for true chocolate lovers.

S’mores Brownies Recipe
Graham crackers, marshmallows and chocolate are indisputably an elite flavor combination, but sometimes you want something a bit different (or just less messy) than a traditional s’more.
I have played around so with so many different desserts using these classic s’mores flavors (from S’mores Donuts to even a Flaming S’mores Cocktail, and everything in between) but today’s S’mores Brownie recipe is definitely a new favorite.
They have that perfect contrast of fudgy, gooey brownie along with a crackly, crispy brownie top – plus I love a good honey graham cracker and some melted marshmallows. It’s decadent yet playful.
I’ve also made these s’mores brownies and topped them off with a sweet chocolate ganache, but I don’t think any frosting or ganache is truly necessary – the crackly brownie top is one of my favorite aspects of this recipe. (If you’re a fan of Brownie Thins, you are going to love how crispy the top of these brownies get.)
While I used my go-to from-scratch brownie recipe to make these S’mores Brownies, you can use your favorite boxed brownie mix in it’s place and stir in the graham crackers and marshmallows.
S’mores Brownies Variations:
- Add a layer of melted marshmallow fluff overtop of the brownies and set under the oven broiler to roast the marshmallow layer
- If desired, crush the graham crackers and place as a base before adding the brownie batter into the baking pan (skipping adding them to the brownie batter)
- Invert this recipe – making blondies (maybe with a mix) and adding chocolate chunks for a twist on these s’mores brownies
- Add additional chocolate chips or chocolate chunks along with the marshmallows and graham crackers
How to store s’mores brownies: these brownies can be stored in an airtight container at room temperature for 3-4 days, or kept in the fridge for up to a week.
Can these s’mores brownies be frozen? Yes, you can individually wrap each brownie and then store in a freezer-safe ziptop bag or your favorite freezer containers for up to three months. (This set of freezer containers is a crazy bargain.)

How to Make S’mores Brownies
Preheat oven to 350F
Grease a 8″ x 8″ casserole dish and set aside.
In a large bowl, beat together the butter and sugar until combined.
Add the eggs and vanilla extract and beat until combined.
In a medium-sized bowl, stir together the cocoa powder, flour, salt and baking powder.
Beat the flour mixture into the sugar mixture and then gently fold in the marshmallows, chocolate chips and graham crackers.
Fold the brownie batter out into the prepared casserole dish.
Bake for 25-28 minutes, until the edges of the brownies are crisp and start to pull away from the pan and an inserted toothpick comes out with just a few crumbs and no wet batter.
