How to Make Sprinkle Ice Cream Sandwiches
Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats. Set aside.
Cream the butter and sugars in a large bowl until light and fluffy, about 2–3 minutes.
Add eggs and vanilla, beating until fully combined.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet, mixing just until combined.

Scoop dough using a medium cookie scoop (about 2 tablespoons) and place 2 inches apart on prepared baking sheets.
Bake for 9–11 minutes, or until edges are lightly golden. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
Once cookies are cool, scoop about ¼–⅓ cup of slightly softened vanilla ice cream onto the flat side of one cookie. Top with a second cookie and gently press to spread the ice cream to the edges.
Roll the edges of the sandwich in additional sprinkles, then place on a tray lined with parchment paper.
Freeze the assembled sandwiches for at least 1 hour before serving.
