Can I make these ahead of time? Yes! Once assembled, the sandwiches can be frozen in an airtight freezer container for up to 2 months. (This set of freezer containers is a crazy bargain.) Wrap each sandwich in parchment or wax paper to prevent sticking.

How do I store leftover ice cream sandwiches? Store any leftover sandwiches in the freezer in a single layer or wrapped individually to avoid freezer burn.

Can I substitute the vanilla ice cream? Absolutely—try mint chip, cookies and cream, strawberry, or even a dairy-free coconut-based ice cream for a twist.

How to Make Sprinkle Ice Cream Sandwiches

Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats. Set aside.

Cream the butter and sugars in a large bowl until light and fluffy, about 2–3 minutes.

Add eggs and vanilla, beating until fully combined.

In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet, mixing just until combined.

Fold in mini chocolate chips and sprinkles.

Scoop dough using a medium cookie scoop (about 2 tablespoons) and place 2 inches apart on prepared baking sheets.

Bake for 9–11 minutes, or until edges are lightly golden. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Once cookies are cool, scoop about ¼–⅓ cup of slightly softened vanilla ice cream onto the flat side of one cookie. Top with a second cookie and gently press to spread the ice cream to the edges.

Roll the edges of the sandwich in additional sprinkles, then place on a tray lined with parchment paper.

Freeze the assembled sandwiches for at least 1 hour before serving.
