Sugar Cookie Cake Recipe

This decadent and delicious sugar cookie snack cake was the result of a wonderful kitchen “accident.”

I was trying to make Christmas sugar cookie bars that were more cake-like than cookie-like, and stumbled upon this perfect recipe. This cake is dense and flavorful, like store-bought snack cakes, holding up perfectly to a rich cream cheese frosting.

This sugar cookie cake just melts-in-your-mouth with that perfect combination of sweet sugar cookie flavor and tart cream cheese frosting. Top it off with sprinkles and you have a crowd-pleasing dessert that will be welcome at any holiday get-together.

This recipe makes enough batter for a 9″ x 13″ casserole dish or cake pan, but I decided to split the batter in half and make two (slightly thinner) 8″ x 8″ cakes and top them with different frostings. You can also swirl maraschino cherries, nuts, chocolate chips, a cinnamon-sugar swirl or sprinkles into one batter and leave the other plain. It’s a great way to have two different desserts to offer, while only going through the effort of making one!

How to Make a Sugar Cookie Cake

Preheat oven to 350F

Grease a 9″ x 13″ casserole dish and set aside.

In a large bowl, beat together the butter and cream cheese until combined, and then beat in the white sugar for 2 minutes until light and fluffy.

Add the egg, vanilla and almond extracts and beat until just combined.

In a medium-sized bowl, stir together the flour, baking soda, baking powder and cream of tartar until fully combined.

Add the dry ingredients into the wet ingredients and beat until fully incorporated.

Pour the batter into your prepared baking dish and bake for 25-30 minutes, until an inserted toothpick comes out clean.

Allow the cake to cool completely before frosting.

For the cream cheese frosting, combine the butter and sugar together in a large bowl until completely combined. Beat in the vanilla extract.

Start off by adding 2 cups of powdered icing sugar, beat well, then add additional as needed.

Use an offset spatula to spread the cream cheese frosting on the cake.

Add Christmas sprinkles for a festive touch.

Ingredients

  • 1 cup butter
  • 8 oz cream cheese
  • 1 1/2 cups white sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cream of tartar

  • 1/2 cup butter, softened at room temperature
  • 8 oz cream cheese, softened at room temperature
  • 1 teaspoon vanilla extract, to taste
  • 3-4 cups powdered icing sugar, to personal preference
