Brown Butter Skillet Cookie Recipe

When I first developed my best ever chocolate chip cookie recipe, it took me three months and countless batches to get it just right.

Sure, there are simpler chocolate chip cookie recipes out there, or ones with fewer ingredients, but this cookie recipe is definitely worth the little bit of extra effort.

As a skillet cookie, this chocolate chip cookie has it all. Golden, crunchy crust, fluffy, tender inside – and a rich buttery taste that is almost caramel-like. Top it with a scoop of ice cream and you’ve got a killer dessert.

We’ve made this recipe so many times (and in so many fun variations) that Ella practically has it memorized – other than browning the butter and lifting the skillet into the oven, she was able to do every step of this easy skillet cookie recipe independently. It would make a great dessert for kids to make for a loved one’s birthday, Father’s Day or even Mother’s Day. (hint hint)

Can I use mini skillets to make a skillet cookie? Absolutely, this recipe can be divided into smaller skillets, or you can reduce the recipe to fit into a smaller pan. The bake time will be less, depending on your skillet size.

What does this skillet cookie taste like? Like the best chocolate chip cookie you’ve ever tasted! Brown butter, brown sugar, cinnamon and molasses set this chocolate chip cookie recipe apart from all others. It’s rich and deeply flavorful with buttery, caramelized notes and a bit of warmth.

Can I freeze this skillet cookie? You can freeze the dough for this cookie recipe for up to two months in an airtight freezer bag or freezer containers. I do not recommend freezing the baked cookie. (This set of freezer containers is a crazy bargain.)

What is brown butter? Brown butter is simply “browned butter.” Melt your butter in a saucepan until the milk solids start to darken and turn a caramel brown, and take it off of the heat. It adds a rich, buttery taste to the cookie and helps bring out the caramel notes of the brown sugar.

How to Make a Chocolate Chip Skillet Cookie

Preheat oven to 350ºF.

Grease your cast iron skillet with butter and set aside.

In a saucepan over medium heat, melt the butter in a pan, but take it just past “melted” so that some of the milk solids start to turn brown. Take off the heat and cool as you prepare your other ingredients. (Hot tip: you can alternatively brown the butter right in the skillet you plan to use for this recipe to cut down on dishes.)

In a medium sized bowl, combine the flour, salt, baking soda and cinnamon. Whisk together until completely combined, and then set aside.

Once the butter has cooled, use an electric mixer to cream together the butter and sugars in a large bowl.

Whip in the shortening (or coconut oil, if you prefer).

One at a time, beat in the molasses, vanilla and eggs.

Add half of the flour mixture into the butter-sugar mixture, combine completely, and then beat in the remaining half of the flour mixture.

Add chocolate chips (to personal taste) and then transfer the dough into your skillet.

Press the dough down into an even layer in your cast iron skillet.

Place skillet in the oven and bake for 25-30 minutes, until golden brown and the middle of the cookie seems set.

Skillet Chocolate Chip Cookie

A giant chocolate chip skillet cookie made with browned butter, this cookie cake is perfect for special occasions or a special family night treat.

Ingredients

  • 1/2 cup brown butter
  • 4 Tablespoons shortening
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 Tablespoon vanilla extract
  • 1-2 T molasses
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon salt (plus extra for sprinkling on top, optional)
  • 1 teaspoon baking soda
  • 1-2 Tablespoons cinnamon
  • 1 cup milk chocolate chips
