A refreshing tropical take on a classic mimosa, this pineapple mimosa brings a delicious twist to any special occasion or brunch. The pineapple leaf and cherry garnish is simple and quick to make but adds real drama to your cocktail.

Pineapple Mimosa Recipe

Even when the only thing you’re celebrating is meeting up with friends or the long-awaited arrival of the weekend, a mimosa always seems to be the perfect celebratory drink.

This pineapple mimosa recipe is juicy, light and effervescent with the sweet and tart flavor of pineapple juice. Personally, I like making mimosas with dry (less sweet) sparkling wines which gives this mimosa recipe a crispness that works beautifully with the subtle sweetness of the juice.

While you can prepare these mimosas in advance, they are so quick and easy to pour that I recommend making each glass fresh so as to enjoy the bubbly carbonation to it’s full effect.

Tips for Perfect Mimosas:

  • Make sure your sparkling wine and pineapple juice are super cold
  • Serve mimosas in narrow glasses to keep the cocktail bubbly (wider-mouthed glasses allow the carbonation to escape faster)
  • Do not stir your mimosa – add the wine, then the pineapple juice, and the cocktail will do your mixing for you
  • Use a good quality, dry sparkling wine – Cava and Prosecco are usually my choices for mimosas as even high-quality ones are more affordable than most champagnes

If opting for a true champagne, a Brut or dry champagne are your best options. (I found this list of 10 Inexpensive Champagnes for you to check out.)

Ingredients

  • 2 oz Sparkling Wine
  • 2 oz Pineapple Juice
  • Pineapple Leaves (Garnish)
  • Maraschino Cherry (Garnish)
  • Ice Cubes

Instructions

  1. Fill a glass with ice cubes.
  2. Pour in sparkling champagne.
  3. Top with pineapple juice.
  4. Garnish with pineapple leaves & cherries.
