Jelly Filled Donuts Recipe

Every Sunday, my family climbs into bed for a giant cuddle and some fresh donuts. Sometimes I grab them from a bakery the day before, sometimes I make a complicated homemade recipe… but most of the time, we’re having semi-homemade biscuit donuts.

Biscuit donuts are a great way to enjoy homemade donuts in a fraction of the time and with considerably less mess – you don’t even need to clean a mixing bowl!

In 30 minutes, you go from 3-ingredients to fresh, hot homemade donuts with a fruity, sweet jelly filling and generous powdered sugar coating. The dough itself is golden and crispy on the outside and light, airy and chewy on the inside.

These are the perfect donuts to make for a lazy Sunday when everyone wants a few more minutes in their PJs and the thought of heading out – even to a drive-thru – sounds absolutely hideous. Stay warm, get those cuddles in and enjoy a sweet treat, too.

Variations on Jelly-Filled Powdered Donuts:

  • bake the donuts instead of frying (Heat oven to 350F, brush the unbaked donuts with butter before baking for 8-10 minutes.)
  • use the air fryer (Heat to 350F, add 1 Tablespoon of oil to the airfryer and place the donuts inside – spray with a bit extra oil, if desired. Bake for 5-8 minutes.)
  • swap out the jelly filling for Nutella, peanut butter or fruit curds
  • add orange zest to the powdered sugar coating for a citrus twist

Tips for the best biscuit donuts:

  • enjoy within 2 days – this will be easy because they will disappear quickly!
  • stretch the donut before frying and make the donut hole wider to get the best shape and prevent them from being too thick
  • keep oil temperature at 350F – use a candy thermometer to keep an eye on the temperature. Too low and they will soak up the oil, too high and they will burn or overcook on the outside while not fully cooking on the inside
  • store at room temperature in an airtight container (if you store in the fridge, the glaze will soften at room temperature)

Can I air-fry these donut instead of frying? Yes, heat the air fryer to 350F, add 1 Tablespoon of oil to the airfryer and place the donuts inside – spray with a bit extra oil, if desired. Bake for 5-8 minutes. Note that the texture will be slightly different than properly frying.

How do I store leftover donuts? Store leftover donut holes in an airtight container at room temperature for 2 days. If keeping them longer, refrigerate for up to 5 days. The texture will be softest on the day they’re made.

Can I freeze these jelly-filled donuts? I personally don’t recommend freezing these donuts as the filling texture will change and the powdered sugar can’t be added before freezing. Since this recipe is so quick and easy, I recommend just making within a day or two of when you plan to consume.
