This week’s 7-day healthy meal plan is all about simple & healthy. Meal plans shouldn’t be daunting or too time consuming. Enjoy these meals for a happier week!

One great way to make breakfast simple is to do a little prep the night before. Casseroles and overnight oatmeals are on the top of simple breakfast list.
Ella and I make a lot of easy healthy recipes, but for others I linked to those that I love and trust. You’ll be sent straight to the recipe with simple instructions to keep your week flowing.
Don’t hesitate to switch out any recipes that don’t fit your tastes. We are all a little different and that is just fine!
Monday Meal Plan
- Breakfast: Ham and Cheese Quiche
- Lunch: Grilled cheese with carrots and ranch dressing
- Supper: French Onion Soup and Salad with homemade apple cider vinaigrette
- Alternative: other soup & salad combo
- Snacks: Banana pudding bars make enough to have several days this week
Tuesday Meal Plan
- Breakfast: Leftover quiche
- Lunch: Quick homemade pea soup
- Supper: Shrimp Scampi
Wednesday Meal Plan
- Breakfast: Strawberry Cheesecake Overnight Oats
- Lunch: Green Beans with shredded chicken, cheese, and salsa (kids might have theirs as quesadillas)
- Supper: Baked Chicken (Make one extra piece of chicken for tomorrow’s lunch) and mashed sweet potatoes
Thursday Meal Plan
- Breakfast: Blueberry muffins and yogurt
- Lunch: Asian Chicken Salad is simple and delicious with a tangy dressing. Pull out the extra chicken from last nights supper to put this together quickly!
- Supper: Beef Stew Dumplings
- Snacks: strawberries, bananas, yogurt, crudites with spinach dip
Friday Meal Plan
- Breakfast: Sunshine Bowl
- Lunch: Tuna Casserole (leftover rice, canned tuna, frozen veg, olive oil)
- Supper: Grilled veggies and sausages
Saturday Meal Plan
- Breakfast: Baked French Toast
- Lunch: Lunch out or deli counter, if grocery shopping today
- Supper: Lentil Mac & Cheese
Sunday Meal Plan
- Breakfast: Cinnamon Bun Pancakes
- Lunch: Heart Themed Lunch
- Supper: Baked Caprese Chicken
- Snacks: strawberries, bananas, yogurt, crudites with spinach dip
