Cucumber Edamame Salad Recipe
I am always on the lookout for easy, healthy side dishes to add to my daughter’s lunch box that I’m also going to enjoy for my own lunch, and this easy cucumber edamame salad was a definite winner this week.
She enjoyed it as a cold salad side with her hot soup, while I enjoyed it at home with a side of salmon. Next time, I might pair it with some rice, noodles or quinoa to make it a hearty lunch option.
This cucumber edamame salad features crunchy cucumbers, chewy, pops of protein-packed edamame and a nutty, umami and tangy Asian-inspired sesame-lime dressing, all resulting in one satisfying and versatile cucumber salad with a contrast of textures and complex flavors. It’s light yet flavorful, and pairs well with so many scrumptious sides.
For best flavor, prepare this salad at least 2 hours before you plan to enjoy it.
To make this recipe soy-free, swap out the soy sauce for tamari and swap out the edamame for chickpeas. (Edamame is underripe, green soybeans.)
Cucumber Edamame Salad Variations:
- Add some spice: Make this a spicy cucumber salad by adding crushed red pepper flakes or chili oil
- Make it a meal: add rice, orzo, quinoa or noodles to give this easy salad more heartiness
- Make it even crunchier: add crushed nuts (like peanuts or walnuts) to amp up the protein and give a variety of textures
- Adjust the crunch factor: you can adjust the crunchiness of the cucumbers by cutting them thinner or thicker; thinner cucumbers will be less crunchy, while thicker-cut cucumbers will be very crunchy.
- Give it some zing: add thinly sliced red onions for added tang and acidity (I recommend soaking them in a bit of water first to make them less pungent)
- Toast the sesame seeds for added nuttiness
What is Edamame? Edamame is a Japanese word to describe underripe, green soybeans. Edamame is a great source of protein and fibre and has become popular in the West thanks to its omnipresence as free appetizer at sushi restaurants.
You’ll often find them in the frozen section at major grocery stores and they are also available at Asian grocers if you’re lucky enough to have one near you.
How to store leftover cucumber edamame salad: store leftover salad in an airtight container in the fridge for up to 3 days. I do not recommend freezing this recipe.

How to Make Asian Edamame Salad
In a medium-sized bowl, whisk together the rice wine vinegar, lime juice, sesame oil, honey and seasoning until well combined.
Taste and adjust the seasoning to your personal preferences.
Slice the cucumber with a sharp kitchen knife or mandolin.
If the edamame is still frozen, rinse well under running water.
Add cucumber, edamame and green onion and toss to coat completely.
Sprinkle on sesame seeds and serve.

- 2 teaspoons Lime Juice
- 1 teaspoon Sesame Oil
- 1 teaspoon Honey
- 1/2 teaspoon Ground Ginger
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon White Pepper
