Last week I shared our Dill Cucumber Salad recipe, and this week I’m back with another delicious cucumber salad: our Cucumber Avocado Salad recipe! This simple 5-ingredient salad recipe is creamy and flavorful – perfect for when you want to skip the dressing and still enjoy your salad.

          

Cucumber Avocado Salad Recipe

When my daughter gets hooked on a vegetable, it’s the only one she wants to see in her lunch… until the inevitable day where she has had “way too many” of that veg and never wants to see it again. (Or at least, not for a couple months.)

Right now, the obsession is cucumbers.

All she wants is cucumbers and roasted red pepper dip, so I’m trying to mix it up and offer a few fun cucumber salads so that she doesn’t get bored of it and write off cucumbers like she did all those vegetables that came before.

(RIP carrots and sugar snap peas.)

She also loves avocados but I haven’t sent them in her lunch before because they brown so easily. By adding a bit of lime juice to this recipe, we prevent the avocado from browning and also add a zip of citrus flavor. The avocado and olive oil combine to make a creamy “dressing” so you don’t feel like you’re just having a big bowl of chopped cucumbers!

Ella really enjoyed this cucumber avocado salad with pomegranates, but I’ll leave that to your personal preference. It adds a bright pop of acidic, fruity flavor and makes the salad more appetizing to look at, too.

How to Deseed Your Pomegranate

The trickiest part of this recipe is deseeding your pomegranate. While there are lots of tricks out there, my favorite method is to cut or tear the pomegranate in half and then place the cut half against your spread out fingers. Hold your hand over a large bowl and whack the back of the pomegranate with a large spoon. The pomegranate seeds should easily pop out of the pomegranate and into the bowl. I do one or two pomegranates at a time and then use them over the course of the week. (You can also buy fresh or frozen pomegranate seeds at your grocery store.)

Cucumber Avocado Salad Ingredients

  • 1-2 avocadoes, chopped**
  • 1 cucumber, chopped
  • 1 Tablespoon lime juice
  • 2 Tablespoons olive oil
  • Salt and Pepper, to taste
  • 1/2 cup pomegranate tendils
  • Cilantro is an optional topping

Tip: I used two avocadoes in this recipe but if you want them more for creaminess, just use one..

How to Make Cucumber Avocado Salad

Combine all ingredients in a large bowl and toss well to coat and mash up the avocadoes a bit.

 

If not serving all at once, skip the salt and instead salt each individual serving to prevent the cucumbers from releasing their water. Store in an airtight container in the fridge.

Ingredients

  • 1-2 avocadoes, chopped**
  • 1 cucumber, chopped
  • 1 Tablespoon lime juice
  • 2 Tablespoons olive oil
  • Salt and Pepper, to taste
  • 1/2 cup pomegranate tendils
  • Cilantro is an optional topping
