A delicious way to incorporate all of benefits of a variety of veggies easily into your day, today’s Carrot Cucumber Radish Salad is crunchy, vibrant and light – making it the perfect side salad or afternoon snack!

Carrot Cucumber Radish Salad Recipe

I’m a huge radish fan, but my daughter absolutely hates them, so trying to find a recipe that we both love that incorporates radishes has been a challenge.

With this easy carrot cucumber radish salad, I found the trick that’s made all of the difference: finely slicing the radishes using a mandolin so that they take on more of the salad dressing and don’t pack such a pungent punch for her.

The radishes still add a spicy, zesty and somewhat bitter flavor to the salad, but it’s nicely balanced with the sweet earthiness of the carrots, the mild cucumber and cilantro-lime dressing.

Carrot Salad Variations:

  • Asian-inspired Carrot Salad: Add shredded cabbage, chopped peanuts, sesame seeds, and substitute our cilantro-lime dressing with one made with soy sauce, rice vinegar, sesame oil, and a hint of honey or brown sugar.
  • Spicy Carrot Salad: Add thinly sliced jalapeños or red chili peppers for heat, along with diced red bell peppers, thinly sliced red onion, and a dressing made with olive oil, lime juice, honey, and a pinch of cayenne pepper.
  • Herbed Carrot Salad: Mix in additional chopped fresh herbs like parsley, dill, and mint.
  • Apple and Carrot Salad: Incorporate thinly sliced apples (I’d suggest something tart like a Granny Smith), raisins or dried cranberries, chopped walnuts or pecans, and optionally add a drizzle of honey to the dressing.
  • Greek Yogurt Carrot Salad: Swap out the dressing below for a dressing made with Greek yogurt, lemon juice and honey.
  • Quinoa Carrot Salad: Add 1/2 cup of cooked quinoa to the salad for additional protein and some whole grains.

How far in advance can I make this salad? This salad is best served within a few hours of preparing, but if you need to make a day or two ahead of time, slice the veggies and whisk up the dressing and store separately, combining just before serving to ensure the vegetables are still crunchy.

Can I add any additional ingredients to this salad? This salad is super versatile (as you can see with the variations above. In addition, you can customize it by adding ingredients like cherry tomatoes, bell peppers or red onion for extra flavor and texture.

How long will this salad last in the refrigerator? This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days. Keep in mind that the vegetables may lose their crunchiness over time.

How to Make Cucumber Carrot Radish Salad

Using a mandolin or a sharp kitchen knife, slice the cucumber, carrot, and radishes into thin slices.

Place in a bowl and add the chopped ciltantro.

Add the oil and salt and pepper to taste. Toss the salad until well coated.
