Cookie Butter Ice Cream Topping Recipe

I was really lucky as a kid to get to travel a lot.

My dad was military and our first international move was when I was 3 years old. Living in China, my parents took advantage of opportunities to travel all over that area of the world – and the government-provided yearly trips home.

I loved so much about flying – visiting the cockpit, warm towels to wipe your hands and face halfway through the flight, trashy in-flight movies… but let’s be honest: the desserts were usually pretty awful!

At some point, Biscoff (or Speculoos) cookies started making their appearance on more and more flights. I was apprehensive at first – but after one taste, I was begging flight attendants for extra packets of cookies and storing them in my super fashionable, neon-colored fanny pack.

Those cookies are everything a gingersnap cookie aspires to be: sweet with warming spices and a delicate crumb that goes perfectly with a hot drink.

And now that my favorite cookie comes in a spreadable “butter” form? You can believe that it’s going to make it’s way into more than a few of our recipes!

This Cookie Butter Ice Cream Topping can be made two ways – either melted with just a little bit of coconut oil or melted and mixed with sweetened condensed milk. I’m personally not a huge fan of sweetened condensed milk, but it does give it a creamier, more luxurious texture similar to a traditional peanut butter ice cream topping.

This cookie butter topping can be used on ice cream, of course, but also as a topping for brownies, cakes, waffles, skillet cookies – or even used as an indulgent fruit dip!

Tip: store extra cookie butter topping in an airtight jar at room temperature for up to three days, or in the fridge for up to a month.

How to Make Cookie Butter Ice Cream Topping

If using the sweetened condensed milk version, place the cookie butter and sweetened condensed milk in a saucepan over medium heat.

Stir constantly until the cookie butter is melted and both ingredients are well-combined.

Remove from heat and mix in the water and vanilla extract.

If using the coconut oil version, you can melt the cookie butter in the microwave for 30 seconds, stir well (reheat if needed) and then mix in the coconut oil.

Ingredients

  • 1/2 cup Cookie Butter
  • 1/2 cup Sweetened Condensed Milk
  • 3-5 Tablespoons Water, as needed
  • 1 teaspoon Vanilla Extract

OR

  • 1/2 cup Cookie Butter
  • 1 Tablespoon Coconut Oil

Instructions

  1. If using the sweetened condensed milk version, place the cookie butter and sweetened condensed milk in a saucepan over medium heat.
