No Bake Sugar Cookie Truffles Recipe

We have always had a rule that Ella can pick out as many things at the grocery store as she is years old. It’s worked out pretty well since the produce area is first, she tends to use up at least half of her options on fruits that aren’t on the grocery list.

But after the produce area? It’s the bakery.

A couple of weeks ago she picked out a package of store-bought sugar cookies at the store, but after trying one she realized they were too “hard” for her, so the rest of the package just ended up sitting on my counter.

Rather than throw them out, I thought I’d experiment and try to turn them into sugar cookie truffles – similar to our no-bake OREO truffles that we make every year.

The combination of sweet sugar cookies and tart cream cheese is perfectly balanced, and then that yummy sugar coating just takes it to a new level! Just one of these truffles is so incredibly satisfying, perfect for setting out as a light dessert after a heavy meal.

You can use store-bought sugar cookies or even leftover homemade sugar cookies to make this recipe. While I love the balance that using cream cheese allows, you can alternatively use frosting for a sweet alternative.

Tip: have vanilla extract on hand if the truffles need it. Mine didn’t but the original cookies were very vanilla-forward.

Place each dipped sugar cookie truffle on the prepared cookie sheets.

Allow candy coating to set fully before storing or serving, about 1 hour.
