While I tend to make our sugar-free banana bread a couple times a month (and honestly think it rivals any version with sugar), every once in a while you have to go with a classic… with maybe a little twist.
This banana bread is perfectly tender and soft without falling apart. The key to avoiding your banana bread becoming gummy is to avoid overmixing the batter. With breads and muffins, it’s better to err on undermixing (and even leave a couple streaks of flour) rather than overmixing. How to Make Snickerdoodle Banana Bread
Preheat oven to 350F.
Grease a loaf pan and set aside.

In a small bowl, whisk together the flour, 1 Tablespoon of the cinnamon, salt and baking soda. Set aside.

In a large bowl, beat together the butter, oil and 3/4 cup of the white sugar until light and fluffy.

Beat in the bananas and egg, then the dry ingredients, followed by the milk.

Pour the batter into the prepared loaf pan.

In a small bowl, combine remaining 1 Tablespoon cinnamon and 1/4 cup of white sugar and then sprinkle over the top of the bread.
Bake for 50-55 minutes until an inserted toothpick comes out clean.
(If the top of the bread is browning too much, cover lightly with tinfoil towards the end of the baking time.)

- Bring the egg to room temperature. A room-temperature egg incorporates more smoothly into the batter and helps create a more even texture.
- Measure flour carefully. Too much flour can result in dry banana bread. Spoon flour into the measuring cup and level it off rather than scooping directly from the bag.
- Let the loaf cool before slicing. Allowing the bread to rest for at least 20 to 30 minutes helps the crumb set and prevents it from becoming gummy.
