No Bake Chocolate Oatmeal Drop Cookies Recipe
Have you ever had chocolate drop cookies?
These chewy, chocolate, peanut butter and oatmeal cookies are part cookie, part confection with a boiled sugar fudge texture combined with chewy oats. My kids love getting to help make these cookies – and of course, are my designated taste testers.
Older kids can confidently take over every step of the recipe, while younger kids can measure ingredients, give the mixture a couple stirs and carefully help portion out the cookie batter.
(Even when the ingredients are slightly mis-measured or we have some ingredient spills, these cookies still turn out flawlessly every time, making this a forgiving recipe for kids to experiment with – however, I do encourage you to pre-measure out your ingredients as this recipe moves quickly.)
Below, I make some suggestions for variations, as well as answer some FAQ before getting into the recipe – if you have any variation suggestions that I don’t have here, I’d love to hear them!
No Bake Drop Cookies Variations:
- swap out half of the peanut butter with Nutella or a different nut butter, like cashew butter
- add 1/3 cup of shredded coconut or toasted coconut flakes
- use old-fashioned rolled oats for a chewier texture
- swap out the peanut butter for cookie butter
- use crunchy peanut butter for a crunchier texture (just increase the amount called for to 3/4 cup)
Pro Tips for Making No Bake Drop Cookies:
- Have everything ready before you start – your ingredients, your cookie sheets lined with parchment paper and your cookie scoop. This recipe moves quickly so you don’t want to be left scrambling.
- Bring the sugar-butter mixture to a complete boil and let it boil for a FULL MINUTE before adding peanut butter, oats, etc to ensure the cookies set up later
- Do not use margarine in place of the butter – this recipe relies on the fat of butter to set up

- Cookie Sheet <– you will want two so you can bake one tray while the other is cooling
- Parchment paper or Silicone Baking Mats
- Cookie scoop
