Classic S’mores Recipe

We have several s’mores-inspired recipes on the blog, so it was about time we put up a classic s’mores recipe to round out the collection!

This homemade s’mores recipe is simple and straight-forward and we provide a few fun variations and tips for those who are making s’mores for the first time or who have never had a good s’mores experience. Personally, I don’t like using Hershey’s chocolate to make s’mores but I used them for this recipe since it is the standard chocolate bar people tend to use. (If you also don’t like Hershey’s, I recommend Ghiradelli squares, Cadbury or Dove milk chocolate bars or Lindt bars.)

While we used metal campfire roasting sticks, you can always go the old-fashioned route and grab a few sturdy, clean sticks.

For oven s’mores, the easiest method is to assemble the crackers, chocolate, and marshmallow on a lined baking sheet, then bake or broil just until the marshmallow is toasted and the chocolate softens. A broiler or very hot oven works fastest, just be sure to watch them closely because marshmallows brown quickly.

Snackable History Fact: S’mores emerged in the early 20th century and the first printed recipe was in a 1927 Girl Scouts handbook with the name “Some More.”

Marshmallows interestingly started as a medicinal preparation made from the root of the marsh mallow plant and were first made into a honey-sweetened confection in 2000 BCE in Ancient Egypt. In 17th century France, confectioners whipped marshmallow root extract with egg whites and sugar into a soft candy. Gelatin later replaced the plant extract, making marshmallows cheaper and easier to mass-produce.

Can I make s’mores without a campfire? 

Yes, use a gas stovetop, broiler or kitchen torch to toast the marshmallow, then assemble as usual.

How do I avoid burning the marshmallow?

Hold it a few inches from the heat and rotate steadily for even browning rather than placing it directly in flames.

What chocolate melts best?

Standard milk chocolate bars melt quickly, but thinner dark chocolate bars also work well and offer more flavor contrast.

Can I prep these in advance? 

Components can be set out ahead of time, but assembly should be done right after toasting for the best texture.

How to make s’mores in the oven?

Preheat the oven to 400F, or use the broiler for a faster finish.
Line a baking sheet with parchment paper or foil.
Place half of the graham crackers on the sheet, add the chocolate and top with marshmallows.
Bake for about 3 to 5 minutes, or broil for about 1 minute, until the marshmallows are puffed and golden.
Remove from the oven, sandwich with the top crackers and let them sit briefly so the chocolate melts evenly

How to Make Campfire S’mores

Using a platter or cookie sheet, lay out one half of the graham crackers and top each with the chocolate squares. 

Use a long stick or s’mores skewer to roast the marshmallow over the bonfire until golden brown. Use caution around the fire and do not get the marshmallow too close to the flames, rotating the marshmallow frequently to avoid scorching. 

Immediately place the toasted marshmallow onto the chocolate and use another graham cracker square to sandwich together and carefully remove the skewer. 

Repeat with the remaining marshmallows and assemble.

S’mores Recipe Variations:

  • Use dark chocolate or a sea salt chocolate bar to reduce sweetness and add depth.
  • Swap graham crackers for chocolate wafers or cinnamon grahams for a subtle flavor shift.
  • Add a thin layer of peanut butter or Nutella to the cracker before assembling.
  • Slide in sliced strawberries or bananas for a fresh, juicy contrast.
  • Try oversized or flavored marshmallows such as vanilla bean or toasted coconut.
  • Swap the Hershey’s for Reese’s Peanut Butter Cups if you want a salty-sweet twist and a built-in peanut butter layer.

Tips for the Perfect S’mores

  • Break chocolate to match the cracker size so each bite has balanced coverage and no bare edges.
  • Use fresh, soft marshmallows for better expansion and a smoother interior when toasted.
  • Choose sturdy graham crackers to prevent cracking under pressure when assembling.
  • Keep chocolate in a shaded, cool spot before use so it does not soften prematurely.
  • While Hershey’s chocolate is classic, I like to opt for Ghiradelli, Cadbury or Lindt chocolate bars since I like the flavor better.
  • If cooking for a group, pre-stack crackers and chocolate on a tray for faster assembly.

Ingredients

  • 2 sleeves regular graham crackers, divided in half
  • 10 oz Hershey’s chocolate bars, broken into squares to fit the graham crackers
  • 12 large marshmallows

Instructions

  1. Using a platter or cookie sheet, lay out one half of the graham crackers and top each with the chocolate squares. 
  2. Use a long stick or s’mores skewer to roast the marshmallow over the bonfire until golden brown. Use caution around the fire and do not get the marshmallow too close to the flames, rotating the marshmallow frequently to avoid scorching.
