Watermelon Feta Salad is a refreshing combination of sweet, juicy watermelon, cooling mint and salty feta cheese. This cold, crunchy fruit salad is perfect for so many summer occasions – BBQs, picnics, lunchboxes, etc.
Watermelon Feta Mint Salad Recipe
Whenever I eat fresh watermelon, I love when I can sprinkle it with some flakey salt because it really enhances the sweetness and flavor of the watermelon. Adding the feta cheese and satisfying crunch of pistachios to this salad definitely serves the same purpose, making the watermelon sweeter and more flavorful.
We made it for our Aladdin Movie Night but it’s honestly perfect for so many summer occasions – BBQs, picnics, lunchboxes, etc. The beautiful presentation of the pink-red watermelon, bright green mint and white feta is a feast for the eyes, indicating that it will be a treat for the palate.
Sweet, fresh watermelon, salty, creamy feta cheese, crunchy, nutty pistachios and tangy, acidic balsamic dressing, ready in less than 15 minutes (including the time to cut up the watermelon).
This sweet, salty and tart Watermelon Feta Salad is light and refreshing, with it’s pretty presentation making it perfect for entertaining.
For full transparency with this recipe: I did not add fresh mint to the version seen in these pictures that I served to my familys! While I enjoy fresh mint in recipes, my daughter would never have touched this recipe if I had included it. Already, it was a big deal for her to try a sweet and salty recipe by adding the feta cheese to a watermelon salad, so I didn’t want to guarantee a recipe fail by adding mint leaves to the mix.
On that note, as with any recipe on Sugar, Spice and Glitter – please customize the recipe according to your family’s personal preferences. If you know your family won’t enjoy red onions or fresh mint in this watermelon salad, leave it out! Don’t put all of your time, effort and the cost of ingredients to waste by including something that your family will obviously snub their noses at. Watermelon Feta Salad Variations:
- Grill the watermelon before adding to the salad to add a smoky element
- Swap out the apples for chopped cucumbers
- Add fresh or pickled red onions for some acidity
- Add chopped avocado for some creaminess
- Add red pepper flakes for some feat
- Add basil for an aromatic, earthy and herbal note
- Add lemon juice and zest for added citrusy tang and brightness
- Just before serving, add grilled chicken or shrimp to round out this salad with a protein
- Serve the watermelon salad over a bed of fresh salad greens
How to Pick a Perfect Watermelon:
- Look for a watermelon that seems relatively heavy for its size. Watermelons that grow too fast can have hollow centres or cracks and taste more watered-down. Dense watermelons tend to taste sweeter.
- Cleanly broken off stems is a good indication of a watermelon that was naturally allowed to reach its peak ripeness on the stem.
- Knock the watermelon with a light tap. You want a watermelon that doesn’t sound hollow.
- Look for an orange, creamy field spot and larger webbing patterns as opposed to a whiter field spot. The darker spot (and webbing patterns) indicates that the watermelon ripened on the field.
Can I use a different cheese instead of feta cheese to make a watermelon salad? Yes, crumbled blue cheese, goat cheese or even ricotta cheese make a great swap that still adds a salty flavor to this salad. (Grab our recipe for homemade ricotta cheese here.)
How to store watermelon salad: Keep in an airtight container in the fridge for up to 3 days.

How to Make Watermelon Feta Salad
Place the cubed watermelon and apples in a large bowl.
Add in the pistachios, feta cheese and pomegranate tendrils. Set aside.
In a small bowl, whisk together the olive oil, honey, white balsamic vinegar and salt and pepper. Taste and adjust to personal preferences.
Pour the salad dressing over the salad ingredients and toss to coat completely.
If adding fresh mint and parsley, stir them in at this stage.
Store in the fridge until ready to serve.
