Cake mix sugar cookies are one of my favorite baking hacks.

Using a cake mix to make cookie dough cuts not just your ingredients in half, it reduces your prep time considerably – yet still results in fluffy, tender, mouth-watering cookies.

But as much as the cake mix cookie batter is a game-changer when it comes to making these cookies, what really matters is how delicious they are – and between the tender, chewy chocolate cookie base and ooey gooey melted marshmallow and chocolate filling, these cookies have all the flavor boxes checked!

If you’re looking for a decadent cookie recipe to make when you’re pinched for time, this is the perfect recipe! (Pin it for later – you know there will be a time when you want to whip up a thank you gift at the last minute, or the kids let you know that there is a school even that you’re expected to provide a baked good for – and this recipe will be a saving grace.)

How to store s’mores stuffed cookies: this cookies can be stored in an airtight container at room temperature for about 5 days, if they last that long.

Can these chocolate cake mix cookies be frozen? Yes! Allow them to cool completely, then use small parchment squares to prevent them from sticking together when you store them in ziptop freezer bags or your favorite freezer containers. (This set of freezer containers is a crazy bargain.)

How to Make Smores Stuffed Cookies

Preheat oven to 350F

Mix together cake mix, cream cheese, butter and egg. Stir in 3/4 of the mini chocolate chips.

Portion into 1 1/2 Tablespoon-sized balls (I used a cookie scoop to help with this). You should end up with approximately 20 cookie balls.

Take one ball and flatten it in your hand. Place the milk chocolate square on top and fold the cookie dough around the pattie to cover it completely.

Repeat with remaining cookie dough.

Sprinkle the remaining mini chocolate chips on top – pressing down slightly if needed to keep them in place.

Bake in preheated oven for 10-12 minutes, until cracked and no longer glossy.

Ingredients

  • 1 box chocolate cake mix
  • 4 oz (1/2 brick) cream cheese
  • 1/3 cup butter, softened
  • 1 egg
  • 20 milk chocolate squares
  • 20 large marshmallows
  • Mini marshmallows, optional

Instructions

  1. Preheat oven to 350F
