A delicious twist on our classic Snickers cheesecake, these Snickers Cheesecake Brownies can be made with any favorite chocolate bar – or even a mix of leftover Halloween candy.
Snickers Cheesecake Bars Recipe
I have a serious Snickers obsession.
After avoiding them for years because I thought they would be the same as a Mars bar, I finally had my first one at 18 and there’s been no looking back!
I perfected my homemade Snickers bars recipe a few years ago, so if you want a Snickers dessert bar that tastes just like Snickers, that recipe will be more what you’re looking for.
Today’s recipe is a decadent brownie cheesecake bar topped with chopped up Snickers… or Twix… or Three Musketeers.. or whatever favorite candy bar you have stashed away in your kitchen. (Or closet, there’s no judgement here.) My favorite thing about this recipe – other than how amazing it tastes – is how easy it is to serve. Portable, hand-held cheesecake – yes, please!
We’re making the chocolate chip cheesecake layer and chocolate ganache drizzle from scratch, so I opted to make the brownie layer with a boxed brownie mix so this recipe wasn’t too time-consuming. Of course, you can make the brownie layer from-scratch if you’d prefer.
To make these Snickers cheesecake bars even more decadent, you can add some chopped peanuts and caramel bits to the cheesecake layer and add some caramel drizzle on top.
Can these Snickers cheesecake brownies be frozen? Yes, individually wrap each cut square and then place in ziptop freezer bags or your favorite freezer containers. (This set of freezer containers is a crazy bargain.)
Do I have to use candy bars for the topping? You can top these cheesecake brownies however you’d like! If you want to keep them Snickers-inspired, you can top with chopped chocolate, salted peanuts and a drizzle of caramel to still have that Snickers flavor profile. But this recipe is incredibly versatile – you can make them into M&M Cheesecake Brownies, top with fresh fruit, add cute chocolate shapes, sprinkles, etc.

How to Make Snickers Cheesecake Brownies
Preheat oven to 350°F
Prepare the brownie mix according to package directions, but reduce the baking time by 15 minutes as we will be baking them again with the cheesecake layer.
While the brownies are baking, prepare your cheesecake layer.
Using an electric mixer, beat together the cream cheese and sugar until well combined, about 2 minutes.
Add the eggs into the cream cheese mixture one at a time, beating to incorporate fully after each addition, then add the vanilla extract.
Stir in the chocolate chips and then pour the cheesecake batter onto the brownie layer.
Reduce oven temperature to 300ºF.
Bake the cheesecake brownies for 30-40 minutes, until the cheesecake is just starting to turn golden around the edges and the center of the cheesecake no longer jiggles when tapped or shaken.
Cool the cheesecake brownies at room temperature for 20 minutes before covering and placing in the refrigerator to cool completely, about 1 hour or overnight.
Once the cheesecake brownies are chilled, prepare the chocolate ganache.
Using a double boiler or a glass or metal bowl placed over a saucepan of boiling water, combine the heavy whipping cream and chocolate chips over medium heat.
Whisk occasionally, until the chocolate is melted and the mixture is thickened.
Remove from heat and allow to cool at room temperature.
Scoop the ganache into a piping bag and then drizzle all over the cheesecake. (You can do the whole cheesecake at once, or cut into bars prior to drizzling.)
Press the chopped candy bars into the cheesecake bars and then top with more drizzled ganache.
