Roasted Honey Glazed Carrots with Rosemary Recipe
Our Instant Pot Candied Carrots are currently on high rotation in our house, which is not something I am ever going to complain about, but I thought I’d introduce a new way of enjoying carrots that uses honey as a natural sweetener and presents a more balanced flavor profile.
These honey roasted carrots are super simple to make, simply:
- chop carrots
- toss with glaze ingredients
- roast for 25 minutes
- serve
Rosemary adds a really unique flavor profile to these honey roasted carrots as it has a slightly lemony, peppery earthiness that nicely complements the rounded sweetness of the honey and the butter used in this recipe. The result is a balanced side dish that has a hint of balanced sweetness that adds something a bit indulgent to your meal, without feeling like you’re having dessert as a side dish.
You can swap out the rosemary for thyme, if desired.
These carrots are best enjoyed when freshly prepared but can be refrigerated and reheated, if needed. I find that the rosemary flavor becomes more pronounced with refrigeration so if you are planning to make these ahead, I would reduce the rosemary to less than what is called for in the recipe.

How to Make Honey Glazed Carrots with Rosemary
Preheat oven to 350ºF
Place chopped carrots in your chosen roasting pan.
Drizzle the carrots with honey and toss to coat.
Sprinkle on the rosemary, stir to distribute evenly.
Place the butter in dollops over top of the carrots.
Bake for 25-35 minutes, until desired level of roasting is achieved.
Season to taste with salt before serving.
