Ham and Cheese Scones Recipe

I am decidedly a savory breakfast person.

Give me all of the heuvos rancheros, onion buns, biscuits and sausage gravy, potato and veggie hashes, or kedgeree.

For my fellow savory breakfast fans, these ham and cheese scones will hit the spot! They are delicious and satisfying as is, with their tender, buttery crumb, golden crunchy exterior and fluffy interior generously loaded with salty, savoury ham and cheese.

They also make a great base for a biscuit breakfast sandwich if you want to slice them and load them up with eggs, bacon or ham and more cheese. A big basket of these would be a welcome addition to any special brunch but they are simple enough to whip up for an on-the-go breakfast during the week.

My only complaint about these scones is that they always disappear within 24 hours! They are soooo good that we find ourselves sneaking into the kitchen to grab another one whenever we get a chance. Doubling the recipe is definitely a wise decision.

You can swap out the ham called for in this recipe for chopped bacon, or add in some chopped green onions, chives or a favorite seasoning blend to make these even more flavorful.

To ensure your scones are airy and light, make sure to use fresh baking powder and not over-knead the dough when shaping the scones. Press the dough just enough to form it into a semi-even circle and resist the urge to handle it more than that.

Can I freeze these ham and cheese scones? Yes, these scones can be prepared ahead of time and frozen before baking. To freeze, prepare the scones right up until the point that you need to brush them with butter or heavy cream. Do not brush them or add the sea salt sprinkle, simply cut into wedges and freeze on a baking sheet. Then remove from the freezer and place the individual wedges in an airtight ziptop freezer bag or your favorite freezer container. (This set of freezer containers is a crazy bargain.)

When ready to bake, remove from the freezer and place on a baking sheet until thawed. Brush with butter or cream and sprinkle with sea salt before baking as directed. (You may need to bake a bit longer if they are not fully thawed.)

Ham and Cheese Scone Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 Tablespoon baking powder
  • 2 teaspoons white sugar
  • 1/2 cup cold butter, cut into cubes
  • 1 cup shredded cheese
  • 1/2 cup small diced ham
    3/4 cup heavy whipping crease, as needed
  • 2 Tablespoons melted butter
  • 2 teaspoons sea salt flakes

Tip: you can use melted butter or heavy whipping cream to brush the scones to stick the sea salt flakes to the scones and help them develop a golden brown exterior.

How to Make Ham and Cheese Scones

Preheat oven to 400F.

Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

In a large bowl, whisk together the flour, 1/2 teaspoon salt, baking powder and white sugar until well-combined.

Add the cold butter and use a pastry cutter or fork to combine with flour mixture until small pea-sized pieces of butter remain.

Stir in 1/2 cup heavy whipping cream until a cohesive but not sticky dough forms.

Stir in the cheese and chopped ham and stir until well-mixed. Add additional heavy whipping cream as needed to form a cohesive dough.

Fold the dough out onto a floured cutting board and form into a large circle, about 1” thick.

Slice the circle into 8 equal triangles using a pizza cutter.

Place the scones on a lined baking sheet. Brush with the melted butter (or you can brush with the heavy whipping cream). Sprinkle with the sea salt.

Bake for 22-25 minutes until scones are lightly golden.
