Brown Sugar Bacon-Wrapped Chicken Recipe
This recipe came to me in the way that all delicious food inventions happen.
I had been working all day, trying to meet some crazy deadlines and ignoring my growing hunger, when I finally hit that danger zone of “I need to eat now!”
Of course, nothing was ready to just heat and eat, and all we had was little scraps of leftovers – two chicken breasts, a couple strips of bacon, and some cheddar.
At first, I was thinking that these were the makings of a delicious sandwich… and then brilliance struck. (If I do say so myself.)
Brown Sugar Dipped.
Bacon Wrapped.
Cheddar Stuffed.
Chicken.
This recipe is an example of when the sum of all things is greater than it’s parts.
It’s unbelievable just how delicious and crave-worthy these little chicken bites are. The perfect blend of sweet, salty, and umami.
The sweet caramelization of the brown sugar, with the fatty bacon, sharp cheddar, and seasoned chicken is just the ultimate in snacking goals. I have since made these babies multiple times, and I’ve never served them to someone without being asked for the recipe.

Ingredients for Bacon-Wrapped Chicken Bites
- 2 chicken breasts boneless skinless (can use 1lb chicken tenders)
- 8 strips bacon
- 1/2 cup brown sugar
- Salt and pepper, to taste
- 1/4 cup cheddar cheese, sliced, optional
Tip: these are best right after baking, but you can prepare them up to the baking stage the night before serving.

How to Make Brown Sugar Bacon Wrapped Chicken
Preheat oven 375F
Cover a baking sheet with tinfoil for easy clean up, and then place a oven-safe rack overtop.
In a shallow bowl, mix together the brown sugar, salt and pepper.
Cut each chicken breast into 1″ thick strips (about 4 per breast) and season. If using cheese, lay one piece on top of each strip.
Wrap each chicken strip with bacon.
Dip the bacon-wrapped chicken into the brown sugar mixture and roll to cover completely.
Place each chicken strip on the rack and bake for 20-25 minutes until an internal temperature of 165F is reached.
