Last year, it was our Caramel Apple Coffee Cake Muffins, but this year it’s all about Mini Caramel Apple Crumb Cake – a fun, single-serving fall dessert for snacking or entertaining.
Caramel Apple Crumb Cake Recipe
Crumb cake is the quintessential afternoon treat with a cup of coffee. It’s my go-to when we have friends coming over for a playdate because it’s an indulgent treat that still makes sense for the middle of the afternoon, and I don’t think I’ve ever heard someone say they don’t like crumb cake!
These Mini Crumb Cakes are a fun twist on the classic, allowing you to skip the slicing and portioning of the cake, and just serve your guest a mini loaf of their own.
They are also perfect for wrapping up as gifts and they are easier to eat on-the-go than a slice of cake requiring a fork. (Perfect for park playdates or when you need to take the coffee date outdoors.)
I also love making this recipe with my daycare kids because then they can each take home a “loaf” to share with their families, rather than a messy slice.
Of course, if mini loaves aren’t your style, you can always make a full-sized caramel apple crumb cake using this recipe. (It will turn out delicious.)
This caramel apple crumb cake has a fluffy, tender center with cinnamon-spiced cake with juicy pieces of apples cooked into the batter, and a buttery-sweet crumb topping that is finished off with a soft caramel drizzle. It is pure fall perfection!
Ingredients for Caramel Apple Crumb Cakes
For the cake batter:
- All-purpose Flour
- Brown Sugar, packed
- Baking Powder
- Salt
- Cinnamon, or to taste
- Sour Cream
- Butter, melted
- Large Egg, at room temperature
- Apple, chopped finely
For the crumb topping:
- Cold Butter
- White Granulated Sugar
- All-purpose Flour
- Ground Cinnamon

Tip: swap out the apples for your favorite fruit mix-in. Feel free to make this a full-sized crumb cake, if desired.

How to Make Mini Crumb Cake Loaves
Preheat oven to 350ºF.
Grease and flour a mini loaf pan and set aside.
In a large bowl, whisk together the flour, brown sugar, baking powder, salt and cinnamon. Make a well in the center and add the sour cream, melted butter and egg. Mix well.
Stir in the chopped apple and then portion the batter into the mini loaf pan.
For the crumb topping, combine the sugar, flour, and cinnamon in a small bowl. Cut in the butter until the crumb coating is formed into small pea-sized pieces.
Divide the crumb topping evenly among the mini loaves, then bake for 18-22 minutes, until the loaves spring back when lightly pressed or an inserted toothpick comes out clean.
For the caramel drizzle, place the caramels and cream in a microwave-safe dish and microwave for 30 seconds, stir well, and reheat as needed.
Drizzle the soft caramel over the mini loaves and let set before serving or packaging.

- 1/4 cup granulated sugar
- 3 and 1/2 Tablespoons flour
- 1/4 teaspoon cinnamon
For the soft caramel drizzle:
- 12 Caramel squares
- 1/8 to 1/4 cup whipping cream
Instructions

Question baking powder is listed twice in the recipe. Is that a mistake and only need one teaspoon of baking powder or did you mean baking soda in the other teaspoon
