Pumpkin Spice Latte Bomb Recipe

My coffee station is one of those spots in my house that brings me a little bit of joy each day.

I have my espresso machine set up beside an insane collection of sugar-free coffee syrups (these ones are my favorites), and adjacent to that is an even more ludicrous assortments of teas. I love having the variety – for both myself and guests. It makes me feel like there’s a little coffee shop in my house, at my disposal.

I also always have a few hot chocolate bombs on hand for Ella and her friends – but it always seemed like a shame that the kids got all the fun with the hot chocolate bombs and us big kids were left out. So, I had to try my hand at a coffee bomb!

This pumpkin spice latte coffee bomb is perfect for those who like their lattes sweet. It reminds me of flavored coffee creamers so it’s definitely a treat rather than a daily indulgence.

For these PSL Bombs, I used pumpkin spice candy melts and Starbucks Via Instant Latte, however you can swap either of those out for your personal preferences:

  • swap the pumpkin spice candy melts for vanilla or salted caramel candy melts
  • swap the candy melts for tempered white chocolate
  • use a different mix or Nespresso Instant Espresso Powder (my favorite)
  • use hot chocolate mix instead of latte mix
  • use a pumpkin hot chocolate mix
  • skip the marshmallows and sprinkles (sad, but understandable)

How to Use a Pumpkin Spice Latte Bomb:

You can use your PSL bomb a couple of different ways:

  • Place the latte bomb in a mug and pour warm milk overtop
  • Place the latte bomb in a mug and pour hot water/coffee overtop
  • Place the latte bomb in a mug already filled with warm milk
  • Place the latte bomb in a mug already filled with hot water/coffee

The hot milk/water/coffee will slowly melt the pumpkin candy sphere, enhancing the flavor of the latte while releasing the powdered latte mix inside of the bomb.

Note: the instant latte mix is meant to be combined with hot water, but using coffee will make a very strong cup of coffee.

How long do latte bombs last? Depending on the heat and humidity of your home, they can be kept in an airtight container at room temperature for two weeks. However, if they are melting or loosing their shape at room temperature, they can be kept in the fridge or freezer without any loss in quality/texture. (In the fridge they will last up to a month, and in the freezer up to three months.)

Kitchen Tools You May Find Helpful

  • Silicone Half-Sphere Mold
  • Measuring Cups and Spoons
  • Piping Bag
  • Skillet
  • Microwave Safe Bowls
  • Silicone Gloves, optional <– these will help with handling the candy melt spheres to prevent leaving fingerprint smudges

How to Make Pumpkin Spice Latte Bombs

Place the silicone sphere molds on a flat surface or baking sheet. Set aside.

Place the pumpkin spice candy melts in a medium-sized, microwave-safe glass bowl. Heat in the microwave for 45 seconds, stir well and reheat as needed until completely melted and smooth.

Place 1 Tablespoon of the melted candy melts into each cavity of the silicone mold and use the back of a spoon to completely coat the inside of the molds, ensuring that the edges are decently thick. Allow to sit for a couple minutes, then flip the tray over the bowl of candy melts and allow the excess to drip back into the bowl.

Place the silicone trays in the fridge for 5 minutes to set.

Once the candy spheres are hardened, remove from the fridge and carefully extract from the molds. (Gloves can be helpful for preventing fingerprint smudges on the candy melts.)

Fill half of the molds with the latte mix and marshmallows – approximately half a packet of the latte mix and 2 marshmallows in each of the filled molds. Leave half of the molds empty (these will be the top of the spheres).

To melt the edges of the empty spheres, either use a skillet on low heat or place a plate over a bowl or pan of hot water.

Place the open edge of the sphere on the hot plate or skillet until the edge starts to melt, then immediately place on a filled sphere, lining up the edges as best you can. You may need to slightly twist the two half-spheres to completely meld them together.

Repeat with all spheres. If any latte bombs are not completely sealed, you can re-melt the leftover pumpkin spice candy melts and use a piping bag or an offset spatula to apply the candy melts to the gaps.

Melt the white candy melts in the microwave, using the same method as with the pumpkin spice candy melts. Drizzle over top of the pumpkin spice bombs (using a piping bag, if desired) and immediately garnish with sprinkles.

Let the white candy melts dry before storing or serving, about 3 minutes.
