You know I love a good cake mix hack recipe and I’ve been playing around for a while to perfect this one: Peanut Butter Cake Mix Cookies! Decadent, chewy and rich peanut butter cookies that come together with only 5 ingredients (4 if you skip the sugar coating) and taste just like a classic, old-fashioned peanut butter cookie.

Peanut Butter Cake Mix Cookies: Using a boxed cake mix, you can make this thick, decadent and rich peanut butter cookie with the perfect balance of sweet and salty. It's buttery, nutty and has that classic chewy texture that helps make a peanut butter cookie so satisfying.

Peanut Butter Cake Mix Cookies Recipe

Have you ever tried to make the 3-ingredient Peanut Butter Cookie recipe that is on the side of many peanut butter jars?

Well, if you haven’t, let me save you some ingredients: it’s terrible! That 3-ingredient cookie recipe results in thin, crispy and oily peanut butter cookies – no, thank you!

For just one (or two) ingredients more, you can make this thick, decadent and rich peanut butter cookie with the perfect balance of sweet and salty. It’s buttery, nutty and has that classic chewy texture that helps make a peanut butter cookie so satisfying.

It’s one of my favorite ways to use a box of cake mix – and a great recipe to have the kids help make.

A note about the classic cross-hatch pattern: Because peanut butter cookies are denser than some other varieties of cookies, they need a bit of help to ensure that they spread out for even baking. So, many bakers use the tines of a fork to press the cookie dough down after portioning out on to a baking sheet.

However, if you want to try something different, a cookie stamp would also help flatten the dough before baking and would give it a unique design. (Or, you use the bottom of a glass or jar to flatten the cookies!)

Peanut Butter Cookie Variations:

  • Make into peanut butter blossoms by pressing a Hershey’s kiss into the centre of each cookie immediately after baking
  • Stuff with chocolates by shaping dough around a chocolate square
  • Add chocolate chips, chopped nuts, dried fruit, etc.
  • Make into peanut butter thumbprint cookies by pressing down the center with a teaspoon shortly after baking and then filling with a teaspoon of jam
  • Use almond butter or cashew butter instead of peanut butter
  • Make into peanut butter sandwich cookies by sandwiching two together with a peanut butter frosting or jam (we share a from-scratch peanut butter frosting here)
  • Add a teaspoon of cinnamon or espresso powder for a subtle flavor boost
  • Use chocolate cake mix instead of yellow cake mix

How to store peanut butter cookies: Your peanut butter cookies can be stored at room temperature in an airtight container for up to a week, or they can be frozen for up to three months using your favorite freezer containers. (This set of freezer containers is a crazy bargain.)

Can I freeze peanut butter cookie dough? Our recipe for peanut butter cookie dough can be made 3 days in advance and stored in the fridge, then brought to room temperature about 30 minutes before baking, or the dough can also be frozen 3 months.

You can freeze the dough as a block of dough, or pre-portion into tablespoon-sized amounts.

How to Make Peanut Butter Cake Mix Cookies

Preheat oven to 350F.

Line two baking sheets with parchment paper or silicone baking mats. Set aside.

In a large bowl, beat together the cake mix, peanut butter eggs and vegetable oil until smooth and completely combined, about 2 minutes.

Place the white sugar in a small bowl.

Use a 1 1/2 Tablespoon cookie scoop to portion out the cookie batter and roll the cookie dough balls in the white sugar until completely coated.

Place the coated cookie dough balls at least 3″ apart on the prepared cookie sheets.

Use a fork to press down in a hatch-pattern on the top of each cookie, flattening them in the process.

Bake for 10-12 minutes until lightly golden and spread out.

Allow the cookies to cool for 2 minutes on the baking sheet before attempting to remove to a cooling rack or serve.

Makes approximately 30 cookies.

  • 2 Eggs
  • 1 cup Peanut Butter
  • 1/2 cup Vegetable Oil
  • 1/3 cup White Sugar

Instructions
