Mango Donuts Recipe
Mango desserts don’t seem to get the respect they deserve in North America.
My daughter loves mango desserts, but I’m usually pretty hard-pressed to find anything more than a mango ice cream (if I’m lucky) at the grocery store.
So, whipping up our own mango treats, it is!
The dough for these mango donuts is soft and airy, golden and crispy on the outside, and perfectly chewy inside. The homemade jelly filling is bright, tangy and sweet thanks to ripe mangoes and passionfruit, cooked down into a glossy, vibrant jam. The white sugar on the outside adds a subtle crunch, balancing the soft, fruit-filled center.
These bakery-style mango donuts are surprisingly easy to make and make a great addition to brunches, special get-togethers with friends, or just a little sweet treat with a cup of coffee or tea.
This recipe takes a bit of time, as you need to let the dough rise twice, but if you’re in a time crunch you can use our pre-made biscuit donut hack instead of making the dough from scratch. You can also make the jam in advance and store in the fridge for a few days before making the donuts.
Mango Passionfruit Donut Variations:
- Swap the mango and passionfruit jam with other homemade or high-quality store-bought jams, for example, strawberry-rhubarb or peach-ginger would be delicious!
- In addition (or in place) of the cinnamon, infuse your jam with spices like star anise, cardamom, ginger, etc.
- Add some flavor to the dough by adding orange or lime zest, 1/2 teaspoon cinnamon or add 1/2 teaspoon almond extract
- Swap out the white sugar coating for coconut sugar, a mix of sugar & lime zest or cinnamon sugar
- For a creamier filling, use a mango pudding or mango curd in place of the homemade mango jam

How do I store leftover filled donuts? Store leftover donuts in an airtight container at room temperature for up to one day. If keeping them longer, refrigerate for up to three days and let them come to room temperature before serving. The texture will be softest on the day they’re made.
Can I freeze the donuts? Yes, freeze the unfilled, fried donuts once cooled. Wrap them individually in plastic wrap and store in a freezer-safe bag or your favorite freezer containers for up to two months. (This set of freezer containers is a crazy bargain.) Reheat in a 300°F oven until warmed through, then fill and sugar-coat them just before serving.
Can I use store-bought jam instead? Yes, I love this Sarabeth’s Pineapple Mango jam and it would be a good swap, even though it lacks the passionfruit element.
Can the donuts be baked instead of fried? This dough will be more like a soft bun if baked, rather than fried. If you’re looking for a baked option, try a brioche dough instead.
What’s a good substitute if I can’t find passionfruit? If fresh or frozen passionfruit isn’t available, you can use orange juice with a bit of lime zest for a similar sweet-tart flavor profile. It won’t be quite the same, but it still complements the mango beautifully.
How do I know when to stop kneading the donut dough? After kneading, the dough should feel smooth, soft, and slightly tacky to the touch, but not sticky. When you press it gently with your fingertip, it should spring back slowly, showing that the gluten has developed. It should hold its shape without sagging, and you should be able to stretch a small piece between your fingers into a thin, translucent “windowpane” without tearing—an indication that the dough is well-kneaded and ready to rise.

- Active Dry Yeast
- All-Purpose Flour
- Granulated White Sugar, divided, plus more for coating

How to Make Mango Donuts
To make the mango passionfruit jam:
In a saucepan over low heat, add the mango and water.
Cook uncovered for 15 minutes, stirring and crushing the mango pieces occasionally.
Add the passion fruit and sugar to the pan and continue to cook on low heat for 25 minutes, until thick and glossy.
Let cool and transfer the jam to an airtight container until ready to use.

To make the donuts:
In a large bowl or the bowl of a stand mixer, combine 2 cups of flour, 4 1/2 Tablespoons of sugar and salt. Stir to combine. Set aside.
Heat the milk in the microwave for 15-20 seconds. Stir in the yeast and 1 teaspoon of sugar. Let rise for 5 minutes.
Add the eggs, milk-yeast mixture and vanilla to the flour mixture. Knead for 2 minutes to combine.
Slowly add in the butter, 1 Tablespoon at a time.
Gradually add in the remaining cup of flour, adding more if needed. Knead the dough until soft, smooth and slightly tacky. It should hold its shape without sagging. Knead for a bit longer on a floured surface, if needed.
Place the dough in a greased bowl and cover with a clean kitchen towel. Set in a warm spot in your kitchen and let rise for 1 hour, until doubled in size.
When doubled, remove the dough to a floured surface and use a rolling pin to roll it out to 3/4″ thickness. Cut into rounds using a 3-1/2″ cookie cutter, re-rolling the scraps as needed.

Line two baking trays with parchment paper and set the donuts on the tray, about 3″ apart. Cover again and set in a warm spot. Let rise for 40+ minutes, until doubled in size.
When ready to fry, fill a heavy bottomed pan with oil about 4″ deep. Set over medium-high heat. Allow oil to reach 350F before adding the donuts.
Fry donuts for 1-2 minutes on each side until browned, then flip over and cook on the other side for 1-2 minutes. Repeat with all donuts.
Transfer fried donuts to a paper towel lined plate. Pour white sugar for coating into a shallow dish.
While the donuts are still hot from the fryer, toss them in the sugar to coat.
Place the mango jam in a piping bag fit with a 1/4″ round tip.
Use a skewer or chopstick to pierce each donut horizontally through the center and gently swirl to widen the hole. Insert the piping bag and fill the center of the donuts with the jam, until it starts to peek out of the hole. Repeat will all donuts.
