No Bake Cornflake Cookies Recipe
Be warned, if you have anyone in your household that is chronically online and has self-diagnosed themselves as suffering from misophonia, they are going to hate this recipe.
Misophonia sufferers have visceral reactions to certain sounds, and a lot of social media users have decided that they have it – and since this cornflake cookie recipe results in a satisfying crunch, it will be absolutely miserable to them, but decidedly enjoyable to the rest of us!
These Cornflake Cookies are a simple no-bake cookie that combines the crunch of Cornflake cereal with a peanut butter candy coating for a sweet, crunchy-yet-chewy treat that is perfect for any peanut butter fan.
No Bake Cornflake Cookies are perfectly balanced with their combination of sweet and nutty flavors and are the perfect no-bake treat to whip up when you’re pressed for time but need a sweet treat for guests – or a family movie night.

You do have to move fast once you mix the cornflakes into the peanut butter mixture so that it doesn’t harden, but there are still plenty of ways to get the kids involved! Ella helped measure out all of the ingredients into the saucepan before I placed it on the heat, and then as I quickly scooped the candy-coated cornflakes onto our baking tray, she was in charge of adding the festive sprinkles.
These cookies are incredibly versatile and you can change up the recipe according to your personal preferences:
- add some melted chocolate chips for a peanut butter-chocolate twist
- add food coloring for bright pop of color
- add in chopped nuts for added crunch and salt
- drizzle white chocolate or candy melts overtop for a fancy touch

How to store Peanut Butter Cornflake Cookies: store in an airtight container at room temperature for a few days, or in the fridge for up to a week. While some people have reported that they have frozen and thawed out the cookies with no issues, I find that freezing and thawing makes them a bit soggy which I don’t enjoy.
Can I use natural peanut butter to make cornflake cookies? You will need to use a commercial peanut butter for best results (texture and flavor) for this recipe. Natural peanut butters can vary in oil content and the candy coating may not set if you opt for natural peanut butter.
Can I swap out the corn syrup for honey or maple syrup? I haven’t tried this but it should work out fine.

How to Make Cornflake Cookies
Line two baking sheets with parchment paper or silicone baking mats.

In a large saucepan, combine the sugar, corn syrup and peanut butter over medium heat.
Stir often until the peanut butter mixture comes to a boil. Continue boiling for 2 minutes, stirring frequently, then remove from heat and stir in the cornflakes.

Use a cookie scoop to portion out the cornflake mixture in 2-3 tablespoons sized cookies onto the prepared baking mats.

Let set for 1-2 hours before storing or serving.
