Beef & Mushroom Campfire Recipe

There’s something utterly comforting about a foil pack dinner: it’s simple, satisfying, and deliciously hands-off.

These Beef Tips and Mushroom Foil Packs are a campfire classic reimagined for the backyard grill, oven, or even air fryer.

Chunks of beef tips are marinated with garlic, fresh herbs, and savory seasoning, then nestled with earthy button mushrooms that soak up every last drop of flavor. The result? Tender, juicy beef with caramelized edges and mushrooms that are equal parts meaty and buttery.

This recipe is perfect for busy weeknights, meal prep Sundays, or low-effort entertaining. The foil pouch steams the ingredients in their own juices, creating a self-saucing meal with barely any cleanup.

Plus, it’s endlessly adaptable—toss in onions, swap the herbs, or drizzle with balsamic glaze before sealing. Whether you’re cooking over a fire pit or just want an easy, one-pan dinner without the pan, this dish delivers big flavor in a humble little package.

How to Make Beef and Mushroom Packets

Tear 4 large sheets of heavy-duty foil (about 12” x 18” each). Lightly spray or brush with oil to prevent sticking.

In a large bowl, toss beef tips with olive oil, minced garlic, salt, pepper, Italian seasoning, and Worcestershire sauce until evenly coated.

Divide the beef and mushrooms evenly among the foil sheets. Fold the foil over the ingredients to create sealed packets, crimping the edges tightly.

  • Grill: Preheat grill to medium-high heat. Place foil packs on the grill, cover, and cook for 10–12 minutes per side (20–24 minutes total), until beef is cooked through and mushrooms are tender.
  • Oven: Preheat oven to 400°F. Place foil packs on a baking sheet and bake for 25–30 minutes.
  • Air Fryer: Set to 375°F and cook foil packs (if size allows) for 15–18 minutes, checking at the 12-minute mark.

Carefully open the packs and garnish with chopped parsley or cilantro.

RECIPE FAQs

Can I freeze the foil packs?
Yes! Assemble the foil packs (raw), wrap tightly in two layers of foil, and freeze for up to 3 months. Thaw overnight in the fridge before cooking.

How should I store leftovers?
Transfer cooled contents to an airtight container and refrigerate for up to 3 days. Reheat in the oven, air fryer, or microwave until warmed through.

Can I use a different type of mushroom?
Absolutely. Cremini, baby bella, or even chopped portobello mushrooms will work well and offer a deeper flavor.

What cut of beef works best?
Beef tips (often from sirloin or tenderloin) are ideal. You can also use stew meat, but it may need slightly longer cooking time to tenderize.

I don’t like cilantro—what should I use instead?
Swap cilantro for fresh parsley, thyme, or rosemary. Each adds its own herbal personality to the dish.
