No Bake Blueberry Cheesecake Recipe

In high school, my dad moved us out to the countryside so he could live out his long-awaited dream of living on a farm with land.

As a teenage girl, this was possibly the worst thing that could have happened. We were over an hour away from the nearest town, and this was well before social media or affordable cell phone plans. I’ve always been an introvert, but this was next level.

However, the lone highlight of that country existence was the bevy of blueberries that covered our property from the beginning of Spring to the middle of Autumn. I would pick baskets and baskets of blueberries – more than my family could ever possibly eat.

I still do the same thing today, only instead of picking the blueberries, I just buy way too many at the grocery store. Every summer. Without fail.

My latest blueberry haul resulted in this decadent blueberry cheesecake. It’s no bake because who wants to heat up the house even more in the summer?

It’s that perfect balance of tart and sweet, and the crunchy graham cracker crust contrasts perfectly with the velvety smooth cheesecake filling. It’s wonderfully satisfying without being too rich at the end of a hot summer day.

While I layered my homemade blueberry sauce on top of the cake, you can swirl it into the cheesecake or even mix it in if you’d prefer.

Next time I make this recipe I’m swapping out the graham cracker crust for an OREO cookie crust, just to see. (But I kind of think that the graham cracker crust will end up still being my favorite – it’s a classic for a reason!)

You can also make this blueberry cheesecake into mini blueberry cheesecakes (like I did with my no bake strawberry cheesecakes) or make in a square casserole dish for blueberry cheesecake squares.

Tips for the Best No Bake Cheesecake:

  • Use room temperature full-fat cream cheese – light or no-fat cream cheeses not only lack the flavor of full-fat cream cheese, the lack of fat in the cheese will prevent this cheesecake from setting up properly. Cold cream cheese will create lumps in your cheesecake.
  • Use an electric mixer to ensure that the cream cheese and whipped topping are fully combined to get a soft, velvety texture
  • Make this cheesecake the day before you plan to enjoy it – the flavors are so much better the next day
  • Swap out the blueberries for whichever berry you prefer – cherry, strawberry or even cranberry!

Can you freeze this blueberry cheesecake? Yes, but the graham cracker crust can get a bit soggy due to the cream cheese if frozen so I personally wouldn’t. I have had great success freezing the blueberry topping, so when I make this recipe I tend to double the topping and freeze half in an airtight freezer bag or freezer container for the next time I want to make this cheesecake. (This set of freezer containers is a crazy bargain.)

Can I use pre-made blueberry pie filling? Absolutely. I like getting to control the flavor and sugar in my homemade blueberry topping and it also is way cheaper for me than store-bought blueberry filling, but this recipe would be a bit easier with that simple swap. Be sure to buy pie filling and not just canned blueberries.

Kitchen Tools You May Find Helpful

  • Pie Plate <– this is similar to the one I used
  • Electric mixer <– this is a great hand mixer if you don’t want to make the investment into a stand mixer
  • Measuring cups and spoons
  • Saucepan
  • Wooden spoon or spatula <– I like these spatulas because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty.

How to Make a No Bake Blueberry Cheesecake

Line and grease a 9” pie pan.

Combine the graham crumbs and melted butter in a bowl.

Press the graham crackers into the bottom of the prepared pan and set in the freezer for 10 minutes as you prepare the cheesecake filling.

Combine the cream cheese and sugar until light fully combined. Add in the cool whip and mix until just combined.

Fold the cheesecake mixture into the prepared graham crust.

Use an offset spatula or the back of a spoon to smooth the cheesecake down.

Place in fridge and let set for at least 2 hours.

Blueberry Topping Directions:

Place all ingredients except for the lemon juice and salt in a pot set above medium heat.

Stirring frequently, cook for 8 minutes until the blueberry skins have dissolved and the consistency resembles a loose jam. Remove from heat and add the lemon juice and pinch of salt.

Allow to cool before adding to the cheesecake.

Ingredients

No Bake Cheesecake Ingredients:

  • 2-8oz packages cream cheese
  • 1/2 cups white sugar
  • 2+ cups cool whip
  • 1 1/2 cups graham crumbs
  • 1/4 cup melted butter

Blueberry Topping Ingredients:

  • 2 cups blueberries (fresh or thawed if frozen)
  • 1 Tablespoon butter
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 Tablespoon butter
  • 1 Tablespoon lemon juice
  • Pinch of salt

Instructions

Graham Cracker Crust Directions:
