No-Mayo Broccoli Coleslaw Recipe

I worked in a fast food restaurant in high school for a couple of years, and it completely ruined traditional coleslaw for me.

Having to grate several heads of cabbage by hand and then add in a vat of fatty mayonnaise followed by multiple cups of sugar was enough to put me off of the stuff for years. I mean, I’m all for indulgence, but not when it comes parading around like a salad. I’ll save my sugar and calories for dessert!

But, you just can’t host a BBQ without putting out coleslaw, at least not where I’m from. People don’t just eat it as a side dish – it’s a required burger topping. And if you put out pulled pork without coleslaw? Well, prepare yourself for a whole lot of side eye.

So, I set to the task of making a healthy coleslaw – with lots of crunchy veggies, no mayonnaise and no sugar. It took a bit of experimentation but I found that my answer lay not in sugar – but in acid! Apple cider vinegar to be precise. It adds a bit of bite and sweetness and really helps bring this mayo-free coleslaw together. I’ve now had so many compliments on this recipe – and no one can believe that it is mayo- and sugar-free!

My biggest tip is to prepare this slaw the night before. The flavors come together even better when they’ve had a day to sit and meld together.

Also, please please please, do not use any flavored greek yogurt for this recipe. The sweeteners that they add to flavored yogurts (usually syrups) will not work in this recipe and kind of defeat the whole “healthy coleslaw thing” that we’re going for here.

You can shred your own veggies or use a pre-made coleslaw mix. If making it yourself, the trick is a mandolin slicer. It’s way easier than using a knife to get those thin slices and you can get a decent one for about $10. It makes thin, even slices of fruits and veggies super easy – and bonus, you can make your own homemade chips with it!

Ingredients for Healthy Coleslaw

  • 1  cup plain greek yogurt
  • 1/4 cup sour cream
  • 2 Tablespoons apple cider vinegar
  • 1 teaspoon lemon juice, optional
  • Salt and pepper, to taste
  • 1/2 bag premixed coleslaw – or 2 cups shredded cabbage, 1 shredded carrot, 1/2 head chopped broccoli

Tip: be sure that you are using a plain greek yogurt free of any sweeteners.

How to Make a Healthy Coleslaw

In a large bowl, combine the greek yogurt, sour cream, apple cider vinegar, lemon juice, salt and pepper.

Taste and adjust to preferences.

Add the shredded vegetables or coleslaw mix and stir to combine thoroughly.

The flavor will get even better overnight, but you can serve immediately, if desired.
