Does anyone else get grocery amnesia?
You’re grocery shopping and you load up your cart with items that you’re positive that you need and are completely out of… only to return home to discover that not only do you already have the items, but that you actually have twice the amount you normally need because you had this same bout of grocery amnesia last week…
No? Is it just me?
Well, this is how I came to have four pounds of blueberries in my fridge with no rhyme or reason. I had to get creative – and quick!
We were having salmon that night, so I thought a fresh blueberry salsa would be the perfect topping for something just a little bit special and unexpected. I whipped up this sweet and spicy mixture in just a couple of minutes and then topped the salmon with it before popping it in the oven. Pure heaven.
The berries burst and took on a delicious roasted flavor, that was almost caramelized with the sweetness of the blueberries. I left the seeds out of my jalapeños but you could add them in if you wanted a bit of heat to your salsa.
Of course, this salsa can also be enjoyed fresh – with tortilla chips or on top of some freshly grilled veggies or chicken.
Now, I know the pictures here look more like a bowl of cut of veggies and berries than a true salsa, but this is how I prepare it when I’m going to use it to top some salmon before sticking it back under the broiler for a few more minutes.
However, if you’re not planning on heating up the salsa, you can always be a bit more heavy handed during the mixing stage so that the berries get a bit more mushed and create a more saucy salsa. It all comes down to personal preference.
