On busy weeknights when time is short but flavor still matters, this Sheet Pan Sausage Recipe comes in clutch.
Italian-style sausages roast alongside sweet bell peppers, tender zucchini, and zippy red onion, creating a rich, savory medley with just the right amount of sweet caramelization around the crisped edges.

Can I freeze this dish? Yes, after cooking and cooling, portion into freezer-safe containers. (This set of freezer containers is a crazy bargain.) Freeze for up to 2 months. Thaw in the fridge overnight and reheat in a skillet or oven.
What vegetables can I substitute? Try mushrooms, cherry tomatoes, green beans, eggplant, or small chunks of potato. Choose vegetables that can roast in about the same time as the sausages.
Can I use chicken or turkey sausage instead? Absolutely, just make sure to adjust the cooking time based on the packaging instructions and confirm that the internal temperature reaches 165°F for poultry sausages.

How to Make Sheet Pan Sausages
Pre-heat oven to 400F
Chop the vegetables and place in your casserole dish or sheet pan.
Add the sausages and then pour the olive oil all over. Turn to coat thoroughly.
Sprinkle on the Italian-style seasoning, to taste.
Cover and place in the oven for 25-30 minutes, until the sausages reach an internal temperature of 145F. Remove tinfoil and set oven to broil to brown the sausages a bit.
Remove from oven and chop up the sausages to serve.
