Easter Hello Dolly Bars Recipe

Do you call these magic bars, 7-layer bars or Hello Dolly bars?

Honestly, until recently, I always thought they were all different types of cookie bars! Probably because, just like with any classic recipe, there are so many variations out there – but I’ve been avoiding magic bars for years while calling Hello Dolly bars one of my favorites… the more you know, I guess?

Whatever you call them (a Hello Dolly bar by any other name would taste as sweet), these Easter cookie bars feature a buttery graham cracker crust, sweet coconut-condensed milk filling studded with nutty, toasted pecans and creamy white chocolate chips, all topped off with a generous layer of chocolate M&Ms.

The crisp base and edges are perfect contrasted by the soft, chewy center and crunchy milk chocolate candies.

It’s a homey, nostalgic favorite that takes minutes to assemble and freezes beautifully. (I’ve got a bagful in my freezer right now!)

Snackable History Fact: Magic Cookie Bars gained popularity in the 1960s thanks to Eagle Brand’s publishing the recipe on their cans of sweetened condensed milk cans and advertisements at a time that shelf-stable pantry staples (like canned milk) gained more popularity. When Hello Dolly! hit the Broadway stage, a Texas newspaper published a version of the bars under that name and the name stuck, especially in the American South. They became a mainstay in community cookbooks and bake sales thanks to their ease, affordable ingredients and delicious flavor.

Yes, the bars will be slightly less sweet and a bit more textured.

Yes, wrap tightly and freeze for up to 2 months. Thaw at room temperature before serving.

Why are my bars too gooey in the center?

They likely need a few more minutes in the oven. The edges should be golden and set, and the center should look just slightly soft but not wet. They will also firm up as they cool.

Easter Magic Bars Ingredients

  • Unsalted Butter
  • Graham Cracker Crumbs
  • Sweetened Condensed Milk
  • White Chocolate Chips – choose a good-quality brand that melts smoothly without becoming waxy.
  • Chopped Pecans – I always use Millican’s Pecans because the freshness and flavor of their pecans is incomparable to what I can usually find at the grocery store.
  • Pastel Candy-coated Chocolates – I used Easter M&M’s for this recipe but you can use any pastel candy you prefer, including Mini Eggs
  • Shredded Sweetened Coconut
  • Easter Sprinkles, for optional garnish

Tip: for added flavor, add a flavor extract to the sweetened condensed milk.

How to Make Easter Magic Cookie Bars

Preheat oven to 350°F and grease a 9×13 baking dish or line with parchment paper.

Melt the butter and mix with the graham crackers.

Press the graham cracker mixture into the bottom of the baking dish. Use the bottom of a measuring cup to lightly press the mixture to form a solid crust base.

Pour sweetened condensed milk evenly over the crust.

Sprinkle white chocolate chips, pecans, candy-coated chocolates and coconut evenly over the top.

Bake for 25-30 minutes, until edges are golden.

Garnish with Easter sprinkles if you like. 

Cool completely before slicing.

Easter Magic Bars Recipe Variations:

  • Swap out the graham crackers for vanilla wafers, OREO cookies, shortbread or a gluten-free option.
  • Milk chocolate chips can replace white chocolate chips.
  • Swap out the Easter M&Ms for Mini Eggs (you can chop them up or use them whole). Micro Mini Eggs are also a great option, if you can find them.
  • Use lemon chips for a spring flavor.
  • Drizzle with white chocolate once cooled.
  • Dye the shredded coconut a pastel color or green to suggest Easter crinkle grass.
  • Or, dye the sweetened condensed milk.
  • Add a flavor extract like vanilla, lemon or almond to the condensed milk.
  • Add 1 teaspoon finely grated lemon or orange zest to the coconut for a bright, aromatic note.

Tips for the Perfect Easter Layered Cookie Bars

  • Pressing the crust lightly helps it hold together without becoming dense. I always like to use the bottom of a measuring cup to avoid getting my hands dirty.
  • Let bars cool fully before cutting into squares for clean slices.
  • Line the baking pan with parchment paper for easy removal of the baked bars. If you don’t have parchment paper, greasing the pan works well, but ensure the bars are fully cooled before attempting to remove from the pan.
  • Add pastel sprinkles immediately after baking (if you wait too long, they won’t set).
  • For this recipe, I used Millican Pecan’s Pecan Pieces. I didn’t realize what a difference there could be between pecan brands, but these are so incredibly fresh and flavorful (And by the way, this is not sponsored – I just really love them.)

Ingredients

  • ½ cup unsalted butter

  • 1 (14-ounce) can sweetened condensed milk
  • 1 cup white chocolate chips
  • 1 cup chopped pecans
  • 1 cup Easter M&Ms
  • 1 cup shredded sweetened coconut
  • Easter Sprinkles for garnish

Instructions

  1. Preheat oven to 350°F and grease a 9x13 baking dish.
  2. Melt the butter and mix with the graham crackers.
  3. Press into the bottom of the baking dish. 
  4. Pour sweetened condensed milk evenly over the crust.
