Peanut Butter Cup Stuffed Chocolate Cake Mix Cookies

Peanut Butter Chocolate Soft Cookie Recipe
There tends to be two camps of cookie fans: those who like them crunchy and crumbly, and those who like them soft and pillowy.
This recipe is for that second group.
Soft, fluffy, melt-in-your mouth chocolate cookies that give way to a creamy chocolate peanut butter filling – these cookies are bakery quality but they are super quick and easy to make at home.
After experimenting a bit with different cake mix cookie recipes, I found that most were falling short for me in terms of flavor. As much as I love a good baking hack, I also am not willing to compromise on taste or texture. For me, a great baking hack helps you spend less time in the kitchen and get great results.
By adding cream cheese into this cake mix cookie recipe, these soft chocolate cookies become richer, softer and creamier – with a pleasant “tangy” mouthfeel that only cream cheese can achieve (and that really works with the sweetness of the chocolate and salty-nuttiness of the peanut butter filling).
I also find that the cream cheese really enhances and brings out the sweetness that the cake mix already adds to the recipe and you don’t have to add any additional sugar. All you need for this recipe is cake mix, cream cheese, eggs and butter and you have the perfect soft chocolate cookie dough!
But you know I can’t leave well enough alone and I had to take these cookies even further into “amazing chocolate cookie territory” by making them into stuffed chocolate cookies!
The last time I made stuffed chocolate cookies was our Double Chocolate Caramel-Stuffed Cookies so I had to do something a bit different, and went all out with these Peanut Butter Cup-stuffed Cake Mix Cookies.
You can definitely use some caramel-stuffed chocolate squares, peppermint patties or squares of plain chocolate in place of the peanut butter cups, if you’d prefer. You could even mix things up and add different fillings to each of the cookies! (I’d just ensure that you “topped” the cookies a bit differently, maybe with different colors of sprinkles so that if someone dislikes peppermint or whatever other fillings you use, they don’t get an unpleasant surprise of biting into what they think is going to be a peanut butter-stuffed chocolate cookie.)
This is a great cookie recipe to keep on hand if you have last minute guests, or your planned dessert doesn’t go as planned. It goes from 5 ingredients to perfectly cooked cookies in less than 20 minutes. Unlike most other stuffed cookie recipes, you do not have to freeze any part of this recipe – the cookie dough is thick enough to protect the peanut butter cups and the dough itself doesn’t spread much while baking.
Kids can also help with this super simple cookie recipe (just check to make sure that the peanut butter cups are well-covered with the cookie dough before you bake them to ensure the filling stays creamy). My daughter loved helping me make “cookie sandwiches” by shaping two discs of cookie dough around each peanut butter cup (the easiest way for little hands to make these).
Ingredients for Reese’s-stuffed Cake Mix Cookies
- 1 box chocolate cake mix
- 4 oz (1/2 brick) cream cheese
- 1/3 cup butter, softened
- 1 egg
- 20 Peanut Butter Cups
Tip: you can use any soft cookie recipe to make this chocolate peanut butter-stuffed cookie recipe, the cake mix cookie dough is just super easy and quick to make with kids so that’s what we preferred to use.
Kitchen Tools You May Find Helpful
- Measuring cups and spoons
- Cookie tray
- Slipmat or silicone baking mat
- Hand mixer or stand mixer
- 1 1/2 Tablespoon cookie scoop
How to Make Peanut Butter Stuffed Chocolate Cookies
Preheat oven to 350F
Mix together cake mix, cream cheese, butter and egg.
Portion into 1 1/2 Tablespoon-sized balls (I used a cookie scoop to help with this). You should end up with approximately 20 cookie balls.
Take one ball and flatten it in your hand. Place the peanut butter cup on top and fold the cookie dough around the pattie to cover it completely.
Repeat with remaining cookie dough.
Bake in preheated oven for 10-12 minutes, until cracked and no longer glossy.
