A few years ago, we were out of our favorite Belgian waffle mix (the same one they use to make Mickey waffles at Disney World) so in a moment of desperation genius, we decided to try using a box of golden cake mix as a waffle mix substitute… and the rest is history.
Since then, we’ve also made chocolate cake mix waffles and (of course) Mickey-style waffles, so when I was trying to come up with an easy yet fun Easter brunch recipe, carrot cake mix waffles seemed like the perfect addition to our waffle recipe collection.
It’s pretty straightforward – just prepare the cake mix according to the box and then portion out onto a heated and greased waffle maker.
The carrot cake mix does all of the heavy lifting with it’s combination of cinnamon, nutmeg and brown sugar that bakes up soft and tender on the inside and crispy and golden at the edges. While I highly recommend using a Belgian waffle maker for best results, you can use whatever waffle maker you have on hand – just note that a Belgian waffle maker is essential if you want that perfect contrast of crispy edges and tender centers.
