Buffalo-Style Hasselback Chicken

Hasselback Chicken Recipe
Hasselback potatoes and stuffed chicken are always crowd-pleasers in my house, so when I saw that hasselback chicken recipes were going viral on Tiktok, I knew that I had to try my hand at making my own.
Hasselback potatoes originated in the 1940s, at the Hasselbacken restaurant in Stockholm, Sweden, hence the unique name. The unique method of cutting the potatoes most-of-the-way through with accordion-like slices became known as the Hasselback technique, so that’s why this method of preparing the chicken is also called “hasselback.”
With potatoes, the hasselback technique allows them to have multiple crispy edges and buttery, tender interiors. For chicken, it allows for multiple pockets to stuff the chicken with different fillings and results in juicy, tender chicken that is well-seasoned throughout.
Today’s Hasselback Buffalo Chicken recipe is naturally low-carb and gluten-free, fork-tender and flavorful without being too spicy. The two cheeses used also gives a wonderful contrast of creamy cheese and juicy chicken. Plus, it’s a one-pan recipe that is baked, which makes them super easy for weeknight meals.
Pro Tip for Using the Hasselback Technique: I personally find this method of preparing stuffed chicken easier than traditional stuffed chicken breasts, but the key to this hasselback chicken recipe is to not cut the chicken breasts all the way through so that you are creating little pockets/slits for the cream cheese to be nestled into.
A “hack” to help prevent you from cutting all the way through the chicken is to place a chopstick (or the handle of a wooden spoon) alongside the chicken as you cut it, so that the chopstick stops the knife from going all the way through.
Hasselback Chicken Variations:
- Swap out the cream cheese for blue cheese, or just add blue cheese crumbs in addition
- for a cheesier take, use Velvetta-style cheese instead of cream cheese
- Brie cheese would also melt beautifully and be delicious
- If the “hasselback” cutting aspect of this recipe intimidates you, you can instead slice the chicken almost in half through the middle and just do a stuffed chicken version of this recipe (although I personally find making hasselback chicken easier than stuffed chicken!)
- Add thinly sliced or shredded veggies to the hasselback slits
- Amp up the heat with some hot sauce, cayenne pepper, cajun seasoning, etc.
- Or add some heat by adding sliced jalapeños or banana peppers – fresh or pickled.

How to prep-ahead or store hasselback buffalo chicken: After baking, you can store leftovers in an airtight container in the fridge for up to 3 days.
If you want to prep-ahead and then bake, you can prep the chicken up to 2 days in advance as long as it’s within it’s best by window by the time you cook it.
How to freeze hasselback buffalo chicken: You can freeze this hasselback chicken recipe either before or after baking, but I tend to freeze after. Wrap each individual breast with parchment paper or plastic wrap, then store in a ziptop freezer bag or your favourite freezer containers. Store for up to 6 months.

Tip: you can stuff the chicken in the casserole dish (instead of the cutting board) to cut down on a bit of the mess.

How to Make Hasselback Buffalo Chicken
Preheat oven to 400F.
Cut several slits, 1/2″ apart, along the top of each chicken breast and about halfway through the chicken, being careful not to cut all of the way through.
Fill each slit with cream cheese, approximately 1/2 Tablespoon each.
Season chicken with salt, pepper and ranch seasoning.
Place the chicken in a 9″ x 13″ casserole dish and pour the buffalo-style hot sauce over top.
Bake for 25-30 minutes until chicken reaches an internal temperature of 165F.
Remove chicken from oven and top with shredded cheese and bacon bits.
Place chicken back in the oven until cheese melts, approximately 5 minutes.
