When you can’t decide between indulging in some peppermint bark or some homemade brownies, the only sensible solution is Peppermint Bark Brownies! A rich and chocolatey brownie with white chocolate ganache and plenty of peppermint white chocolate baked into the brownie batter and topping these decadent brownies.

Peppermint Brownies Recipe

I love peppermint bark, but to be honest – if I’m going to have a dessert, I want a little bit more indulgence than those little shards of chocolate can give me.

Last year I made an epic peppermint triple chocolate cake, and this year I am satisfying my peppermint chocolate craving with these rich, fudgy peppermint chocolate brownies with a silky white chocolate ganache frosting.

The inspiration behind these brownies was a package of white chocolate peppermint baking bits that somehow managed to make their way into my shopping cart and back home to my baking cupboard…

(One package had enough for me to make these peppermint chocolate brownies and also a batch of double chocolate peppermint cookies.)

We used our go-to homemade brownie recipe to make these indulgent, fudgy brownies but you can also swap that out for a boxed brownie mix. The real hero here is that silky white chocolate ganache which can be made with white chocolate chips, almond bark or even some of those peppermint white chocolate squares. It is the difference between a peppermint brownie and a peppermint bark brownie.

Peppermint Bark Brownie Ingredients

For the Brownies:

For the white chocolate ganache:

  • Milk
  • Butter
  • White Sugar 
  • Vanilla Extract
  • White Chocolate Chips <– can use almond bark or white chocolate peppermint squares
  • White Chocolate Peppermint Bits, for garnish

How to Make Peppermint Bark Brownies

Preheat oven to 350F

Grease and line a 9″ x 9″ baking dish

In a large mixing bowl, combine the sugar and butter until light and fluffy, 2 minutes.

Add the eggs and vanilla and beat until incorporated.

In a separate medium-sized bowl, combine the cocoa powder, flour, salt and baking powder. Stir until mixed.

Add half of the dry ingredients into the butter-sugar mixture, beat well, then add remaining half.

Stir in the 1/2 cup white chocolate peppermint chips and then fold the mixture into the prepared baking dish.

Bake for 25-30 minutes, until the center is firm to the touch and the edges are crisp and pull away from the edges of the pan.

Allow to cool as you prepare the ganache.

Place milk, butter and sugar in a medium saucepan over medium heat.

Stir frequently until the mixture is completely incorporated.

Remove from heat and then add the vanilla extract and white chocolate chips. Stir until completely melted.

Pour the white chocolate ganache over the brownies and smooth with an offset spatula.

Sprinkle the additional white chocolate peppermint bits on the ganache while it is still wet.

Let ganache set before cutting and serving, about one hour.

Ingredients

  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup white chocolate peppermint bits

For the white chocolate ganache:

  • 1/3 cup milk
  • 1/3 cup butter
  • 1 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips or almond bark
  • PLUS additional 1 cup white chocolate peppermint bits for garnish

Instructions
