JELL-O Shots with Coconut Rum
Coconut Rum Punch isn’t the only way to enjoy coconut rum! These Coconut Rum JELL-O Shots are a tropical take on a party classic!
Coconut Rum Jell-O Shots Recipe
Rum cocktails just scream summer for me, especially coconut rum with it’s sweet, tropical flavor.
These blue JELL-O shots are inspired by the classic Blue Hawaiian cocktail, which is made with rum, pineapple juice, Blue Curaçao and cream of coconut. (Not to be confused with a “Blue Hawaii” which swaps the cream of coconut out for sweet and sour mix.)
I decided to skip the cream of coconut, as it can be a finicky ingredient and the consistency of it differs so widely between brands, and go with both coconut rum and Sonic’s Ocean Water gelatin mix, which has a perfect coconut-citrus flavor. (If you can’t find Ocean Water JELL-O, you can use plain gelatin or berry blue JELL-O for this recipe.)
You could add a dollop of coconut whipped cream to the top of of these JELL-O shots to really bring the coconut flavor full-circle and incorporate the creaminess of the original cocktail.
Can I make these coconut rum JELL-O shots ahead of time? Yes! For best consistency, I would only make these shots about 2 days before you plan to serve them, but they will keep covered in the fridge for about a week without any loss of quality or flavor. Use these shot glasses with lids to keep them fresh.
Can I add more rum? Absolutely! You need to keep the same ratios of hot and cold liquids as described in the recipe below, and you can’t exceed 1 1/2 cups of cold liquid per each 3oz box of gelatin if you want the recipe to set (gel). HOWEVER, you can replace some of the pineapple juice or some of the Blue Curaçao with coconut rum.
What if I don’t want to use coconut rum? If you don’t have coconut rum, you can use your favorite brand of plain rum (or vodka) and either add in a teaspoon of coconut extract or just let the Ocean Water JELL-O cover the coconut flavor angle.
If you’re not a big fan of coconut, use Blue Berry JELL-O and plain rum or vodka to make this recipe.
Do I need to use Blue Curaçao? Not at all! I used it to stay as true to the original Blue Hawaiian inspiration as possible, but you can swap it out for any triple sec, or just replace the 1/2 cup of Blue Curaçao called for in this recipe with additional coconut rum (or pineapple juice).
