Snickerdoodle Mug Cake Recipe
Longtime readers know that my daughter is very selective when it comes to desserts and usually snubs most of my offerings.
But snickerdoodle cookies are one thing she can’t resist!
Making the cookies can be a bit of a hassle (make the dough, refrigerate it, roll into balls, roll in cinnamon sugar, then bake..) but this fluffy, cinnamon-sugar cake is a fun way for us to enjoy all of those yummy snickerdoodle flavors in less than 4 minutes!
This is a great dessert to make when you’re fresh out of treats – or trying to avoid keeping excessive snacks on hand. The single serving size is perfect and completely satisfying. Plus, it’s easy enough for kids to make independently. Ella loves making these for sleepovers with friends – they are always so impressed and it’s better for me than buying a bunch of snacks that may just end up sitting around the house, tempting me.
And yes – it has a perfect cake texture. I’ve tried a few of those microwavable packets for cake mix and often the texture is just not perfect. This microwave cake is fluffy with a crunchy cinnamon-sugar topping, and also some (optional) hidden cinnamon-sugar layers for added texture.
Not a huge cinnamon fan? Swap out the cinnamon in this recipe for cocoa powder for a hot chocolate-inspired mug cake.
Tip on microwave strengths: You may want to start at cooking these mug cakes for just one minute, insert a toothpick, and then gauge if you need more cooking time. The microwave we are currently using while we renovate the kitchen needs a full two minutes, but our old (nicer) microwave had these fully cooked in a minute and thirty seconds.
How big is this mug cake? It’s about the size of a cupcake. You probably could cook it in a smaller tea-cup sized mug, but I like to use a bigger mug to prevent the batter from spilling out onto the microwave as it cooks and puffs up.
Can this snickerdoodle mug cake be frozen? Yes! Pop the mug cake out of the mug and place in an airtight freezer bag or freezer container for up to three months.
Can I prepare the batter ahead of time? You can potentially prepare your mug cakes a couple of hours before you plan to microwave them and just refrigerate them until you are ready. I wouldn’t prepare them more than a day in advance of planning to cook them.
Can I make these mug cakes ahead of time? Because we’re not cooking these mug cakes with eggs, they do dry out a bit quicker than normal cake. They are best consumed within a day of making them.
Can I make this snickerdoodle mug cake gluten-free? Yes, use a C4C gluten-free all purpose flour to make this mug cake gluten-free.

How to Make a Snickerdoodle Mug Cake in the Microwave
In a small bowl, whisk together flour, sugar, baking powder, and cinnamon until thoroughly combined.
Stir in milk, melted butter, and vanilla until batter is smooth.
Into a medium-sized, microwave-safe bug, scoop a big spoonful of batter, then sprinkle with a teaspoon of cinnamon sugar. Alternate layers of batter and cinnamon sugar, ending with cinnamon sugar.
Microwave on high for one two minutes, or until cake is done to your liking. (You can insert a toothpick to check for doneness.)
Allow to cool for a couple of minutes before serving.

Snickerdoodle Mug Cake
Make a fluffy snickerdoodle mug cake in just 3 minutes! The perfect single-serving dessert when you are craving something sweet, this fluffy, cinnamon-sugar mug cake tastes just like a snickerdoodle cookie!
Ingredients
- 1/4 cup + 2 tablespoons All Purpose Flour
- 2 tablespoons White Sugar
- 1/4 teaspoon Baking Powder
- 1/4 teaspoon Cinnamon
- 1/4 cup milk, at room temperature
- 2 tablespoons Butter, melted and cooled
- 1/2 teaspoon Vanilla Extract
- For layering/topping:
- 1 tablespoon White Sugar
- 1/4 teaspoon Cinnamon
Instructions
- In a small bowl, whisk together flour, sugar, baking powder, and cinnamon until thoroughly combined.
- Blend in milk, butter, and vanilla until batter is smooth.
- Into a 14-ounce (or larger) microwave-safe mug with straight sides (for even cooking), scoop a big spoonful of batter, then sprinkle with a spoonful of cinnamon sugar. Alternate layers, ending with cinnamon sugar.
- Microwave on high for 1 to 1 1/2 minutes, or until cake is done to your liking. Allow to cool for a couple of minutes before serving.

This did NOT work for me… batter was very delicious tho
This needs an egg. Texture lacked it.
I have never seen a mug cake with an egg. The proportions would be way off. Perhaps some applesauce would solve the textural issue for you?
