You know I love quick and easy desserts. (OK, and so does Ella.) After experimenting with our One Minute Lava Cakes, we branched out to trying a Snickerdoodle Mug Cake.

Snickerdoodle cookies are for sure a family favourite, appearing in our kitchen way more often than I’m going to admit. So it was only natural Ella and I broke out the snickerdoodle ingredients and tried our hand at making a Snickerdoodle Mug Cake, for a quick, single-serving fix.
Snickerdoodle cookies can be made in so many ways. I’m sure you have a recipe your grandmother used. But Grandma didn’t have a microwave to give this layered, quick cake a try. I like to add a little extra cinnamon sugar in the middle of my batter before I put it in to cook. There is nothing better then the little bit of extra sweet flavor and slight crunch that it lends to each bite.
The result was better than I could have hoped for! We whip this cake up for a quick, delicious snack before heading out for our afternoon grocery shopping trip or library time.
This is such an easy recipe, the kids will love to help too. Ask your child to grab the ingredients as you work on making supper. Your snickerdoodle mug cake will then be ready to pop in the microwave while you clear the supper dishes!
Snickerdoodle Mug Cake
- In a small bowl, whisk together flour, sugar, baking powder, and cinnamon until thoroughly combined.
- Blend in milk, butter, and vanilla until batter is smooth.
- Into a 14-ounce (or larger) microwave-safe mug with straight sides (for even cooking), scoop a big spoonful of batter, then sprinkle with a spoonful of cinnamon sugar. Alternate layers, ending with cinnamon sugar.
- Microwave on high for 1 to 1 1/2 minutes, or until cake is done to your liking. Allow to cool for a couple of minutes before serving.
