Today’s Jalapeño Popper Chicken recipe is an easy baked chicken recipe with all of the flavor of bacon-wrapped jalapeno poppers in a hearty main dish. Ready in just over 30 minutes (with only a few minutes of prep time) this flavorful chicken is unbelievably tender and juicy, making this one of my favorite options for busy weeknights.

Jalapeño Popper Chicken Recipe
One of my current favorite ways to cook chicken breasts so that they turn out super juicy and flavorful is to smother the chicken before cooking in a Greek yogurt-based coating that has been generously seasoned.
While I often just season the yogurt with this seasoning from Trader Joe’s, sometimes I get a little more creative – like with this baked jalapeño popper chicken.
Tangy Greek yogurt is seasoned with garlic powder, onion powder, white pepper and salt before amping up the flavor with rich cheddar cheese, salty bacon and mild heat from diced (deseeded) jalapeño peppers. As the chicken bakes, the yogurt coating forms a golden crust that helps keep the chicken breasts juicy.
(If you prepare the night before – or even 30 minutes before – the yogurt will also work to tenderize the chicken thanks to the lactic acid and calcium in the yogurt.)
While the prep only takes a few minutes, you wouldn’t believe it based on the amazing combination of flavors and how perfectly tender the chicken bakes.

How to Make Jalapeño Popper Chicken
Preheat oven to 350F.
Place chicken breasts in a casserole dish and set aside.

In a small bowl, whisk together the Greek yogurt and seasonings. Add the cheddar cheese, chopped bacon and jalapeños and stir until completely combined.

Pour the Greek yogurt mixture over the chicken breasts.
Bake for 20-25 minutes, until chicken reaches an internal temperature of 165F.
Set oven temperature to broil and allow the tops of the chicken to brown slightly before removing from oven, about 2-4 minutes. It should reach an internal temperature of 165F.

- Use evenly sized chicken breasts or pound them to uniform thickness for consistent cooking.
- Choose thick Greek yogurt to prevent excess moisture in the baking dish – low-fat is not your friend for this recipe!
- Pre-cook the bacon before mixing into the marinade if you like crispy bacon.
- Stir a few jalapeño seeds into the Greek yogurt coating to add heat. (Alternatively, ensure the membranes and seeds are fully removed for a mild flavor.)
- Shred your own cheddar for better melting and flavor compared to pre-shredded varieties.
