Today’s Jalapeño Popper Chicken recipe is an easy baked chicken recipe with all of the flavor of bacon-wrapped jalapeno poppers in a hearty main dish. Ready in just over 30 minutes (with only a few minutes of prep time) this flavorful chicken is unbelievably tender and juicy, making this one of my favorite options for busy weeknights.

For this Jalapeño Popper Chicken, tangy Greek yogurt is seasoned with garlic powder, onion powder, white pepper and salt before amping up the flavor with rich cheddar cheese, salty bacon and mild heat from diced (deseeded) jalapeño peppers. As the chicken bakes, the yogurt coating forms a golden crust that helps keep the chicken breasts juicy.

Jalapeño Popper Chicken Recipe

One of my current favorite ways to cook chicken breasts so that they turn out super juicy and flavorful is to smother the chicken before cooking in a Greek yogurt-based coating that has been generously seasoned.

While I often just season the yogurt with this seasoning from Trader Joe’s, sometimes I get a little more creative – like with this baked jalapeño popper chicken.

Tangy Greek yogurt is seasoned with garlic powder, onion powder, white pepper and salt before amping up the flavor with rich cheddar cheese, salty bacon and mild heat from diced (deseeded) jalapeño peppers. As the chicken bakes, the yogurt coating forms a golden crust that helps keep the chicken breasts juicy.

(If you prepare the night before – or even 30 minutes before – the yogurt will also work to tenderize the chicken thanks to the lactic acid and calcium in the yogurt.)

While the prep only takes a few minutes, you wouldn’t believe it based on the amazing combination of flavors and how perfectly tender the chicken bakes.

Baked jalapeño popper chicken combines juicy chicken breasts with a creamy, cheesy topping made from Greek yogurt, cheddar, bacon and jalapeños. It is an easy, high-protein dinner option that brings classic jalapeño popper flavor into a simple oven-baked meal.

Recipe FAQs

Can I use chicken thighs instead of breasts?

Yes, boneless thighs work well and stay juicier, but may require slightly longer cooking time.

How spicy is this jalapeño popper chicken?

It is mild to moderate depending on the jalapeños. Removing seeds and membranes reduces heat significantly.

Can this be made ahead?

Yes, assemble it up to a day in advance and refrigerate until ready to bake.
Leftovers can be stored in the fridge for up to 3 days.

Can jalapeño popper chicken be frozen?

Allow the chicken to cool completely, then store it in an airtight container or freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat in the oven at 350F until warmed through.

What should I serve with it?

Roasted vegetables, rice, potatoes or a simple green salad balance the richness.

Can I make jalapeño popper chicken in the air-fryer?

Yes, cook the coated chicken in the air-fryer at 325F for 15-18 minutes until chicken reaches an internal temperature of 165F.

Kitchen Tools You May Find Helpful

  • Measuring Cups and Spoons
  • Mixing Bowl
  • Wooden Spoon or Spatula <– I like these spatulas because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty
  • 8″ x 8″ Casserole Dish
  • Meat Thermometer <– This is the meat thermometer I have been using for the past 6 years – I’ve never had to change a battery and it’s super sturdy and reliable. It was a bit pricey, but unlike the $15 models that you can buy, this one isn’t going to need replacement. It is waterproof and comes with a two-year warranty. (Thermoworks also has a $15 pocket-sized model if you want to try that out first before investing in the MK4.)

Jalapeño Popper Chicken Recipe Variations:

  • Cream Cheese Version: Swap Greek yogurt for softened cream cheese for a richer, more traditional popper-style topping.
  • Cheese Swap: Use pepper jack cheese instead of cheddar to amplify the heat and add meltability.
  • Add Crunch: Add crushed pork rinds or panko on top before broiling for a crisp finish.
  • Herby Finish: Mix in chopped green onions or chives for a fresh, sharp contrast.
  • Bacon-Wrapped Version: Wrap the chicken in whole slices of bacon instead of mixing chopped bacon into the cream cheese mixture.
  • Air-Fryer Method: Cook the coated chicken in the air-fryer at 325F for 15-18 minutes until chicken reaches an internal temperature of 165F.

Tips for the Perfect Jalapeño Popper Chicken

  • Use evenly sized chicken breasts or pound them to uniform thickness for consistent cooking.
  • Choose thick Greek yogurt to prevent excess moisture in the baking dish – low-fat is not your friend for this recipe!
  • Pre-cook the bacon before mixing into the marinade if you like crispy bacon.
  • Stir a few jalapeño seeds into the Greek yogurt coating to add heat. (Alternatively, ensure the membranes and seeds are fully removed for a mild flavor.)
  • Shred your own cheddar for better melting and flavor compared to pre-shredded varieties.
