A crunchy and refreshing Shaved Brussels Sprouts Salad with apple, walnuts, Parmesan, bacon and a quick homemade orange-dijon dressing. This easy fall salad comes together in less than 15 minutes and makes a great side for the holidays (or anytime).

Shaved Brussels sprouts salad is an easy, no-bake side for the holidays or just a filling entrée salad with lots of health benefits that can be enjoyed all year around, but especially in the late fall and winter.
Shredding the Brussels sprouts helps reduce the bitterness because they get well-balanced by the coating of the orange-dijon salad dressing and the balance of the salad toppings.
And oh, the salad toppings! Arguably the best part of any salad. While I highly recommend incorporated sweet apples, crunchy walnuts, salty Parmesan cheese and savory bacon to amp up the crunch and flavors of this Brussels sprouts salad, you can change it up to suit your own personal preferences.
The orange-dijon dressing is sweet, tangy and slightly spicy, helping to mellow out the sometimes bitter taste of the Brussels sprouts.
I highly recommend using a mandoline (food slicer) for thinly and evenly slicing the Brussels sprouts. If you don’t have one, you can use a knife or the slicing or shredding setting on a food processor, but I highly recommend the minimal cost of a mandolin – I use mine at least every week.
You can buy ones that have chopping, matchstick/julienne or french fry-making attachments, or keep it simple with just a mandoline blade.
Shaved Brussels Sprout Salad Variations:
- add dried fruit like dried cranberries
- or add more fresh fruit, like mandarin segments or pomegranate
- add pumpkin seeds or sunflower seeds for added crunch
- swap out the walnuts for your preferred nuts – or use a honey roasted nut for added sweetness and crunch
- use a balsamic dressing instead of the orange-dijon dressing outlined below
- you can roast the brussels sprouts for a more caramelized and less bitter flavor
- while I think the orange juice adds enough sweetness, you can add maple syrup or honey for even more sweetness
- swap out the bacon for shredded prosciutto or salami
- add some protein – cooked chicken or fish would be perfect

Once the salad is assembled, it can be kept for up to 3-4 days.

How to Make Shaved Brussels Sprouts Salad
Use a mandolin slicer or sharp knife to shave the Brussels Sprouts into thin slices.
Place in a large bowl.
Add the diced apple, chopped walnuts, shredded Parmesan cheese and chopped bacon. Toss to combine. Set aside.
In a small bowl, whisk together the orange juice, olive oil and dijon mustard until creamy and emulsified.
Season with white pepper and adjust to taste.
Drizzle the orange dressing over the Brussels Sprouts salad and toss to coat completely.
