Mint Chocolate Cake Mix Cookie Recipe
Mint chocolate desserts always go over like gangbusters in my house. That refreshing and addictive combination of rich chocolate and cooling peppermint is just so satisfying!
While I have an amazing from-scratch double chocolate cookie recipe that I love, it takes about 15 minutes to prepare and also requires chilling time in the fridge before baking. Not a huge deal, but some days you just need something super quick and easy with minimal ingredients – without compromising on flavor.
These tender chocolate cake mix cookies have everything you’d want in a double chocolate cookie. They are flavorful, rich and decadent. Then…. you get to that surprise mint filling that provides a sugary, cooling sensation on your tongue that makes these cookies taste so indulgent.
I stumbled on these different flavored mint patties (raspberry, salted caramel and dark chocolate orange) and made a second batch swapping out the mint patties with the raspberry patties. They were sooooo good!
You can also make these chocolate cake mix cookies with different fillings. So far we have tried PB cups, OREOs, maraschino cherries, etc.
Can these chocolate cake mix cookies be frozen? Yes! Allow them to cool completely, then use small parchment squares to prevent them from sticking together when you store them in ziptop freezer bags or your favorite freezer containers. (This set of freezer containers is a crazy bargain.)

How to Make Chocolate Cake Mix Cookies with Mint Centers
Preheat oven to 350F
Line two baking sheets with parchment paper or silicone baking mats.
Combine the chocolate cake mix, eggs and oil together until completely combined.
Portion the dough into 1-Tablespoon sized scoops.
Flatten each scoop and place a peppermint patty in the centre. Fold the cookie dough around the patty so that it is completely enclosed.
Place the cookie dough on the prepared baking sheet and press 1 teaspoon of Thin Mint bits on top.
Bake for 8-10 minutes.

Ingredients
- 1-15oz box chocolate cake mix
- 1/2 cup vegetable oil
- 2 eggs
- 20 Peppermint Patties <-- this is the brand we used, they make different flavors like Raspberry and Salted Caramel Patties, too!
- 1/2 cup Thin Mint bits
Instructions
- Preheat oven to 350F
- Line two baking sheets with parchment paper or silicone baking mats.
- Combine the chocolate cake mix, eggs and oil together until completely combined.
