These Copycat Crumbl Key Lime Pie Cookies boast all of the flavour of a key lime pie with its creamy, zesty filling and buttery graham cracker crust – in a convenient, single-serve cookie form.

Our key lime pie cookie is a graham cracker-infused sugar cookie with a generous "filling"inspired by a classic key lime pie filling, and topped with a touch of whipped cream and key lime zest. It's tart, creamy and sweet and incredibly rich.

Key Lime Pie Cookies Recipe

I am having so much fun trying to replicate all of our favorite Crumbl cookie flavors – this is our 10th Crumbl Copycat recipe!

This key lime pie cookie is a hard one to get your hands on at the store – it’s been over 2 months since the last time they offered it, and that was SEVEN months after the time before! While I totally get that they create demand and buzz by limiting the cookie flavors and when they are available, it has made developing my own recipes an absolute necessity. My cravings don’t just occur on Crumbl’s cookie schedule!

Today’s key lime pie cookie is a graham cracker-infused sugar cookie with a generous “filling”inspired by a classic key lime pie filling, and topped with a touch of whipped cream and key lime zest. It’s tart, creamy and sweet and incredibly rich.

Unlike most of our other Crumbl copycat cookies, this key lime pie cookie is not topped with frosting. The cookies are each indented (before and after baking) to be able to hold some key lime pie filling, creating a cookie-pie hybrid dessert.

To store your Crumbl Key Lime Pie Cookies, store in the fridge in an airtight container for up to 4 days. (For best results do not garnish with lime slices and whipped cream until ready to serve as the key lime slices will become slightly bitter if stored and impart that same bitter flavour to the whipped topping.)

These Crumbl Key Lime Pie Cookies can be frozen! To freeze, place the cookies in a contaner in a single layer and freeze for 1 hour, until filling is hardened. After this, you can wrap or stack the cookies in an airtight freezer container or freezer bag. (This set of freezer containers is a crazy bargain.) When ready to serve, thaw in the fridge for 4 hours or overnight.

Can I substitute key lime juice and zest with regular limes? Yes, if you’re making this recipe out of season or just cannot source key limes, you can use regular limes, just note that you may want to increase the sugar slightly to make up for the tarter flavour of regular limes.

You can also use bottled key lime juice (I always have a bottle in the fridge during the summer – that way I can make a key lime dessert whenever the craving hits).

Tip: If serving these cookies later, prepare the cookies and filling, but do not fill each cookie until ready to serve. Store the cookies in a sealed plastic container separate from the key lime filing which should be placed covered or sealed in a plastic bag in the refrigerator.

How to Make Key Lime Pie Cookies

Preheat the oven to 350 degrees Fahrenheit and prepare a baking sheet with parchment paper and set aside.

In a mixing bowl add the softened butter and brown sugar. Blend until creamy.

Then add in the eggs and vanilla together. Use a hand mixer to mix again until combined.

Pour the crushed graham crackers and flour into the wet ingredients along with the baking soda, powder and salt.

Use a rubber spatula to fold these dry ingredients with the wet until incorporated and no flour streaks are left.

Use a large cookie scoop to make 2 inch round balls of cookie dough and place on the prepared baking sheet about 2 inches apart from each other.

Use the bottom of a clean glass to press the center of each cookie and flatten, leaving a slight crinkly edge to each cookie, perfecting for filling with the key lime filling later.

Bake in the oven for 13-15 minutes or until the edges of the cookies are set.

Remove the cookies from the oven, re-press the glass into each cookie to ensure the “dent” is deep enough to hold the key lime pie filling, and then let cool completely.

While those cool, make the key lime filling.

In a large bowl, add the cream cheese. Blend with a hand mixer until smooth. Then add the sweetened condensed milk along with the powdered sugar and salt.

Blend again until creamy. Pour in the lime juice, heavy cream and vanilla extract. Blend for about 2 minutes until the filling becomes fluffy and silky smooth.

Add the lime zest and fold into the filling until evenly distributed.

Once the cookies have cooled, take a large tablespoon of the key lime filling and transfer to the center of each cookie. Spread evenly with the spoon creating a thick layer of filling.

Repeat with the rest of the cookies. Top with a small dollop of whipped cream and finish with extra lime zest for garnish.

Serve and enjoy!

Ingredients

For the Graham Cookies:

  • 1 cup butter, unsalted
  • 2 cups dark brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 ½ cup all purpose flour
  • 1 cup crushed graham crackers
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt

For the Key Lime Pie "Filling":

  • 16 ounces cream cheese
  • 1 can sweetened condensed milk
  • 2 tablespoons powdered sugar
  • ¼ teaspoon salt
  • ⅓ cup lime juice
  • ⅓ cup heavy cream
  • 1 teaspoon vanilla
  • 1 tablespoon lime zest

For the Optional Garnish:

  • Lime Zest
  • Lime Slices
