Lemon Pepper Potato Wedges

These Crispy Lemon Pepper Potato Wedges are the perfect side dish – tangy, peppery, and baked to golden perfection. They are a fun alternative to the same-old French fries and are super easy to make with just 3 everyday ingredients.

Oven Baked Lemon Pepper Potato Wedges Recipe
One of my easiest go-to side dishes when we’re having a BBQ or casual get-together with friends is throwing a batch of quick and easy baked potato wedges in the oven.
While I love these Roasted Greek Potatoes more, today’s lemon pepper potato wedges are much quicker and easier to make, plus they are more approachable for picky guests or kids.
Oven-baked lemon pepper potato wedges are golden and crispy with a fluffy interior that practically melts in your mouth and a citrus-kissed, peppery bite that allows them easy to pair with everything from burgers to grilled fish, or even a fancy roast chicken.
The lemon pepper seasoning does all the heavy lifting, offering that familiar hit of tang and heat.
Soaking the wedges in hot water before roasting helps them bake up with a perfect contrast in texture – tender inside, crisp outside – without needing a deep fryer or even an air-fryer. (Although you can definitely make this recipe in the air-fryer – see our directions for that below.)
We used our homemade lemon pepper seasoning recipe to make these lemon pepper potato wedges, which consists of lemon peel, black pepper and salt. If the lemon pepper seasoning you are using does not contain salt, you may want to add a teaspoon or so to this recipe.
Lemon Pepper Potato Wedge Variations:
- Add 2 tablespoons of finely grated Parmesan during the last 10 minutes of baking for a cheesy, crispy crust.
- Stir a pinch of cayenne pepper into the lemon pepper mix for added heat.
- Add 1/2 teaspoon garlic powder to the lemon pepper mix or freshly minced garlic to the oil before coating the wedges.

Can I use a different type of potatoes instead of Russets?Yes, you can use Yukon Gold or red potatoes but they may result in creamier wedges with less crisp. Russets give the best crunch due to their high starch content.
Why leave the skin on the potato wedges? Keeping the skin on adds extra texture and helps the wedges crisp. Just scrub them well before slicing. (If desired, you can peel them.)
Can I make lemon pepper potato wedges in an air fryer? Absolutely. Cook at 400°F for 15–20 minutes, shaking the basket halfway through.
Why soak the potatoes in hot water before baking? Soaking removes excess surface starch, helping the wedges get crispier and roast more evenly.
How to cut potato wedges: Place the potato on a cutting board and slice it in half lengthwise. Lay each half cut-side down, then slice it lengthwise again to make quarters. Slice each quarter in half (or thirds, for thinner wedges), cutting at an angle to form even-sized wedges.
Try to keep all the wedges similar in size so they cook evenly.

How to Make Lemon Pepper Potato Wedges
Place a large pot of water on the stove and heat. Do not boil.
Meanwhile, slice all potatoes into even wedges by placing each potato on a cutting board and slice it in half lengthwise. Lay each half cut-side down, then slice it lengthwise again to make quarters. Slice each quarter in half (or thirds, for thinner wedges), cutting at an angle to form even-sized wedges. Repeat with all potatoes.
Try to keep all the wedges similar in size so they cook evenly.

Place the sliced potatoes in the hot water and soak for 10 minutes.
Drain the potatoes and place on a lined or greased baking sheet. (Optional: use some paper kitchen towel to lightly pat dry the potato wedges.)
Preheat oven to 450F.

Drizzle the oil over the potatoes and toss to coat completely.
Sprinkle on half of the the lemon pepper seasoning, flip over the potatoes and sprinkle remaining seasoning to coat completely.

Spread the wedges evenly on the baking tray to prevent overcrowding.
Bake for 25-30 minutes, flipping over halfway through the cooking time.
Makes approximately 4 servings.
