Instant Pot Shrimp Scampi
A delicious Instant Pot pasta recipe, this Instant Pot Shrimp Scampi is a garlicky, buttery take on a weeknight classic.
Instant Pot Shrimp Scampi Recipe
It’s very rare for me to want to eat in the same restaurant twice.
Unless I really loved the vibe, or there is a dish there that I can’t make myself and truly love, I usually prefer to try something new. There are sooo many restaurants in the city that I live in, that it just seems a shame to not try as many as I can if I’m going to be spending the money dining out.
(The only exception being our corner cafe – we love walking down there once a week and treating ourselves to a pastry and girl talk!)
So when Ella recently asked me to return to a cute little restaurant so she could order their super-garlicky shrimp scampi, I instead suggested we try to make it ourselves. I knew the only reason that she was craving their version was because they LOADED on the garlic, just the way that she likes it, whereas I usually take a more balanced approach to things.
While I would recommend that most people just add 1 Tablespoon of garlic to this recipe, in reality my daughter enjoyed it with 3 heaping Tablespoons… dragon breath for days!
Adjust the garlic to your own personal preference – and if you don’t want to use wine, you can just leave that out without adding anything in it’s place. The recipe doesn’t have a wine flavor at all, it just adds some nice acidity and caramelization with the garlic.
All you can taste in this recipe is the sweet creaminess of the butter, the slightly acidic and nutty sweetness of the garlic, and the salty-nuttiness of the shrimp – so you can see how all of these ingredients work together to create a delicious dish!

Ingredients for Instant Pot Shrimp Pasta
- 2 lb shrimp
- 2 Tablespoon oil
- 2 Tablespoon butter
- 1 Tablespoon minced garlic, or more to taste
- 1/2 cup white wine, optional
- 1/2 cup chicken stock
- 1 lb pasta or 3 cups cooked rice*
- 1 Tablespoon lemon juice, optional
- Salt and pepper, to taste
- Parsley, optional garnish
Tip: for the true garlic lovers – bump that garlic up to 3-4 Tablespoons!

How to Make Instant Pot Shrimp Scampi
Place the oil and butter in the Instant Pot. Set to Sautee.
When the butter is melted, add the garlic and cook until fragrant. Add the white wine and chicken stock to deglaze the pot, and stir up any browned bits.
Turn off the Sautee setting and add the shrimp and cover.
Set to meat/stew for 1 minute and natural release for 5 minutes. Stir in the cooked pasta or rice and add the lemon juice, salt and pepper to taste.
*To cook rice in your instant pot, use 2 cups of rice and 3 cups of water. Use the rice button on Instant Pot and do a 10-minute natural pressure release.
*To cook pasta in your instant pot, use 2 cups of pasta to 3 cups of water. Use the soup button and cook 8 minutes, quick release.
