Golden, bubbling peaches tucked under a tender, buttery cake topping—this Instant Pot Peach Cobbler delivers classic, Southern comfort food in a fraction of the time.
The peaches becomes soft and syrupy, almost caramelized, while the cake mix absorbs the juices and transforms into a spoonable, pudding-like layer with crisped edges. It’s warm, sweet, and simple – a modern twist on a old-fashioned favorite.
Use fresh or canned peaches, whatever is available – the beauty of this recipe is in it’s simplicity.
Grab your Instant Pot, a package of vanilla cake mix and some fresh (or canned) peaches and get ready to make a old-fashioned peach cobbler.
(Also, just for the record – just because I live in the South part-time doesn’t mean I have gained a love of cobbler. I’d still rather a rich brownie or slice of lemon meringue pie, but that doesn’t mean I won’t serve the people what they want!)
Instant Pot Peach Cobbler Variations:
- Add cinnamon or nutmeg to the peaches for a warm spice note.

- Or, for a less sweet version, use pre-made biscuit topping instead of cake mix and top with a sprinkle of sugar

- Sprinkle a tablespoon of brown sugar over the cake batter for a crispy, caramelized topping.
- Brown the butter for a deeper, nutty flavor in the topping. To brown the butter, heat in a saucepan over medium heat and continue to cook until the mild solids turn a caramel brown.

Can I use frozen peaches? Yes, thaw them first and drain any excess liquid to avoid a soggy cobbler.
Do I need to stir the cake mix into the peaches? No, just layer the cake mix over the peaches and butter over the cake mix—this helps create the cobbler texture.
Can you use Pyrex in Instant Pot? Anything you put in the oven, you can put in your Instant Pot! If you are cooking with Pyrex, you may need to adjust your cooking time slightly. You can also purchase an Instant Pot cake pan with handle, which would make removing this cake so much easier.
If you typically cook savoury dishes in your Instant Pot, you may want to look at purchasing some extra sealing rings to ensure that your cake doesn’t take on a savoury flavor from your other recipes.

How to Make Peach Cobbler in the Instant Pot
Grease the bottom and sides of a 7-inch heatproof baking dish that fits inside your Instant Pot.
Place the sliced peaches in the bottom of the dish.
Sprinkle the dry cake mix evenly over the peaches.

Pour the melted butter evenly over the top of the cake mix. Do not stir. (If using softened butter, just evenly distribute as best as you can.)
Add 1 cup of water to the bottom of the Instant Pot liner and place a trivet inside.
If desired, wrap the top of the baking dish with tinfoil. (This will result in a crispier cobbler.)

Set the baking dish on the trivet, secure the lid, and set the valve to sealing.
Cook on High Pressure for 25 minutes. Let pressure release naturally for 10 minutes, then quick release.

Carefully remove the dish, let cool slightly, and serve warm with vanilla ice cream or whipped cream.
